Steak Ingredients- 250g Beef steak (sirloin or tenderloin recommended)
- 10 Kumquats
- 1 handful whole garlic cloves
- A small bunch of arugula
- 2 stalks of young garlic (green garlic)
- 4 tablespoons high-heat cooking oil
Steak Marinade- 1 teaspoon McCormick Steak Seasoning (or your favorite steak rub)
- 1/2 tablespoon plum extract (maesilcheong)
- 1 tablespoon olive oil

Cooking Instructions
Step 1
Let’s start by marinating the steak for maximum flavor. First, gently toss the beef with the plum extract and let it sit for about 5 minutes. The plum extract helps to tenderize the meat. After 5 minutes, drizzle with olive oil and generously sprinkle with steak seasoning (salt, pepper, etc.), ensuring it’s evenly coated on all sides. Let the steak rest at room temperature for another 10 minutes. This step helps the steak cook more evenly.
Step 2
Prepare your flavorful garnishes. Thinly slice the whole garlic cloves into about 0.5 cm thick pieces. Cut the young garlic stalks into bite-sized pieces, around 3-4 cm long. Halve the kumquats. Having these prepped will make cooking smoother.
Step 3
Now, it’s time to cook the steak! Heat 2 tablespoons of cooking oil in a pan over medium-high heat. Pat the marinated steak dry with paper towels and carefully place it in the hot pan. You should hear a satisfying ‘sear’ sound. Searing the steak quickly over high heat helps to lock in the juices.
Step 4
Sear the steak for about 2-3 minutes per side, aiming for a beautiful golden-brown crust while keeping the inside juicy. Once both sides are nicely browned, add the sliced garlic and halved kumquats to the pan around the steak. Let them cook together, infusing their flavors.
Step 5
To ensure the steak is cooked through to your liking, reduce the heat to low and cover the pan with a lid for about 5 minutes. This steaming process allows the juices to redistribute, resulting in a more tender and succulent steak. Add the prepared young garlic stalks to the pan during this time. Their mild sweetness and aroma complement the steak wonderfully.
Step 6
Time for plating! Arrange the fresh arugula on the bottom of your serving plate. Place the perfectly cooked steak on top. Arrange the roasted kumquats, garlic, and young garlic stalks around the steak. A slice of toasted baguette makes a wonderful accompaniment. Enjoy your delicious homemade steak feast!
