Juicy Paprika Beef Wellington
Juicy Beef Wellington Encased in Colorful Bell Peppers!
Beef Wellington is a dish where meat is encased and baked in the oven! This recipe uses bell peppers, which are low in calories and high in Vitamin C, to lock in the meat’s juices and boost immunity!
Essential Ingredients- 1 red bell pepper
- 1 yellow bell pepper
- 400g beef tenderloin
- Pinch of salt
- Pinch of black pepper
- Drizzle of steak sauce
- Drizzle of hot sauce
- 1 egg (for egg wash)
- 4 button mushrooms
- 1/2 onion
- 2 tablespoons mustard sauce
- 8 slices of bacon
Cooking Instructions
Step 1
Season the beef tenderloin generously with salt and pepper, and let it marinate for about 5 minutes. Add 1 tablespoon of olive oil to a preheated pan and sear the beef on all sides for about 1 minute per side, totaling 5 minutes, just to brown the exterior and seal in the juices. Set aside to cool slightly.
Step 2
Remove the stem and seeds from the red and yellow bell peppers. Slice off the bottom to create a flat base. Cut the bell peppers into large rings, about 1.5 cm thick. Ensure the center is hollowed out enough to hold the beef.
Step 3
Finely mince the onion and button mushrooms. You can use a food processor or a knife for this. It’s best to chop them separately.
Step 4
Heat 1 tablespoon of olive oil in a preheated pan over medium-low heat. Add the minced onion and mushrooms, along with a pinch of salt and pepper. Sauté until the moisture has evaporated and the mixture is fragrant and slightly caramelized, creating a mushroom duxelles. Transfer to a bowl and let it cool completely.
Step 5
Place the bacon slices on a cutting board, overlapping them in a star or cross shape. Ensure there’s enough overlap to wrap the filling securely.
Step 6
Spread a layer of the cooled mushroom duxelles evenly over the center of the bacon arrangement. Place the seared beef tenderloin on top of the duxelles. Brush 1 tablespoon of mustard sauce evenly over the beef.
Step 7
Carefully wrap the bacon around the beef and duxelles, tucking in the ends to form a neat package. Ensure the bacon is tightly sealed.
Step 8
Whisk one egg in a small bowl to create an egg wash. Brush the egg wash all over the bacon-wrapped beef, ensuring it’s fully coated. This will help the bacon crisp up and seal the package.
Step 9
Lightly spread the remaining 1 tablespoon of mustard sauce inside the prepared bell pepper rings. Carefully place the egg-washed, bacon-wrapped beef inside each bell pepper ring, pressing gently to fill any gaps.
Step 10
Preheat your oven to 200°C (392°F). Bake the bell pepper beef Wellington for approximately 7 minutes, or until the bacon is crispy and the bell peppers are slightly tender. Cooking time may vary depending on your oven.
Step 11
Remove from the oven and carefully transfer the Paprika Beef Wellington to a serving plate. Drizzle with steak sauce and hot sauce to your liking for a flavorful finish. Enjoy this visually stunning and incredibly juicy dish!
