- 40g ketchup
- 20g oyster sauce
- 15g sugar
- 60g water

- 40g ketchup
- 20g oyster sauce
- 15g sugar
- 60g water
Cooking Instructions
Step 1
First, prepare the vegetables that will add flavor to your Hambak steak. Finely chop the onion, carrot, and green onion. The finer the chop, the softer they’ll be when cooked and the better they’ll blend with the meat.
Step 2
Heat 2 tablespoons of cooking oil in a pan over medium-low heat. Add the chopped vegetables and sauté until translucent. Be careful not to burn them. Once sautéed, let the vegetables cool slightly. Sautéing and cooling the vegetables concentrates their sweetness and removes moisture, preventing the meat mixture from becoming too wet.
Step 3
In a large bowl, combine the ground beef and ground pork. Add 3 tablespoons of ketchup, a pinch of whole black pepper, 1/2 tablespoon of sugar, 1/2 tablespoon of chicken stock powder (or 1 tablespoon of water), 1 teaspoon of salt, 3 tablespoons of breadcrumbs, and the 2 eggs.
Step 4
Put on disposable gloves and gently mix the patty ingredients. Avoid overmixing, as this can make the steaks tough. Mix just until the seasonings and ingredients are evenly combined. The mixture should be cohesive.
Step 5
Add the sautéed and cooled vegetables to the mixture and gently combine again. Ensure the vegetables are evenly distributed throughout the patty. This step adds more flavor to your Hambak steak, making it even more delicious.
Step 6
Divide the mixture into desired portion sizes. For example, if making 2 adult-sized and 2 child-sized patties as shown, aim for about 250g for adult portions and 45g per child portion. You can adjust the size according to your preference.
Step 7
To prevent the center of the Hambak steak from puffing up excessively during cooking, gently press down the center of each patty with your thumb. This helps maintain a nice, flat shape after cooking.
Step 8
Melt 3 tablespoons of butter in a pan over low heat. Place the Hambak steaks in the pan, cover with a lid, and cook slowly over low heat until thoroughly cooked through. Cooking time will vary depending on thickness, but aim for about 5-7 minutes per side. Cooking slowly over low heat ensures the juices remain inside, keeping the steaks moist.
Step 9
While the Hambak steaks are cooking, let’s make the sauce. In a small saucepan, combine all the sauce ingredients: 25g butter, 40g ketchup, 20g oyster sauce, 15g sugar, and 60g water. Bring to a simmer over low heat.
Step 10
Once all the sauce ingredients have melted and the sauce begins to bubble, continue to simmer and stir for about 3 more minutes, or until it reaches your desired consistency. Stirring frequently will prevent it from boiling over. Your delicious, thick Hambak steak sauce is now ready.
Step 11
Prepare a fried egg to serve alongside your Hambak steak. Fry it to your preferred level of doneness, whether sunny-side up or fully cooked.
Step 12
Plate the cooked Hambak steak and generously spoon the warm sauce over it. Top with the perfectly fried egg for a complete, juicy, and delicious homemade Hambak steak experience. Enjoy your meal!
