Main Ingredients

  • 250g Duck Breast (or your preferred duck cut), sliced
  • 1/4 Onion, thinly sliced

Duck Marinade

  • 2 Tbsp Soy Sauce
  • 1 Tbsp Mirin (or cooking wine)
  • 1 Tbsp Plum Extract (or syrup)
  • 1/2 Tbsp Ginger Juice (or a pinch of ginger powder)
  • 1/2 Tbsp Minced Garlic

Cooking Instructions

Let’s start by preparing the delightful marinade that will bring out the best in your duck. In a medium-sized bowl, combine 2 tablespoons of soy sauce, 1 tablespoon of mirin, 1 tablespoon of plum extract, 1/2 tablespoon of ginger juice, and 1/2 tablespoon of minced garlic. Mix them well until thoroughly combined. Add the thinly sliced 1/4 onion to the marinade; this will help tenderize the duck and reduce any gamey flavors. (Note: The provided photo shows the marinade ratio for 500g of duck; this recipe is for 250g.)

Now, add 250g of your prepared duck slices to the bowl with the marinade. Gently toss and mix the duck with the marinade using your hands, ensuring every piece is evenly coated. It’s important to really massage the marinade into the duck for maximum flavor absorption. For an even richer taste, let it marinate for at least 10 minutes.

Preheat your grill or a non-stick pan over medium-low heat. Arrange the marinated duck slices in a single layer on the hot surface. Duck naturally releases its own fat, so you likely won’t need to add any extra oil initially. Once the duck pieces begin to brown and sizzle, flip them over and continue cooking until they are cooked through and beautifully golden brown on both sides. Grilling the sliced onions alongside the duck will add a lovely sweetness.
