  • 2 lbs fresh pork ribs (approx. 15 pieces)
  • 5 bay leaves
  • 10 whole garlic cloves
  • A pinch of whole black peppercorns
  • Generous amount of perilla oil (deulgireum)

Incredible BBQ Sauce

  • 4.5 Tbsp rich Hunter’s sauce
  • 3 Tbsp ketchup
  • 3 Tbsp tonkatsu sauce (or Worcestershire sauce)
  • 2 Tbsp soy sauce
  • 3 Tbsp oligo syrup (corn syrup)
  • 1 Tbsp minced garlic
  • 1 Tbsp sugar
  • 1 Tbsp lemon juice (or mirin)
  • 1 cup water (200ml)

Cooking Instructions

Step 1

First, prepare 2 lbs (approx. 15 pieces) of fresh pork ribs. Soak them in cold water for at least 30 minutes to thoroughly drain the blood. This is the first secret to a clean taste without any gamey odor. Properly draining the blood makes the meat much more tender.

Make a few small cuts on the drained ribs with a knife to help the sauce penetrate better. Place the ribs in a deep pot, add 5 bay leaves for aroma, 10 whole garlic cloves for a mild pungent flavor, and a generous pinch of whole black peppercorns. Pour enough water to cover the ribs completely. Simmer over medium-low heat for 40 minutes, covered. Boiling them this way will make the ribs very tender.

Now, let’s make the incredible BBQ sauce that will define the flavor of your ribs! In a bowl, mix 4.5 Tbsp of Hunter’s sauce for deep flavor, 3 Tbsp of ketchup for a sweet and tangy taste, 3 Tbsp of tonkatsu sauce for a rich flavor (you can use Worcestershire sauce if you don’t have tonkatsu sauce), 2 Tbsp of soy sauce to enhance savoriness, 3 Tbsp of oligo syrup for a glossy finish, 1 Tbsp of minced garlic for aroma, 1 Tbsp of sugar for a mild sweetness, 1 Tbsp of lemon juice for freshness (or mirin as a substitute), and 1 cup of water to achieve a smooth consistency. Mix well to ensure even seasoning.

After boiling, carefully rinse each rib under running water and place them on a colander. This step removes any impurities that may have come out during boiling, ensuring a cleaner and more delicious taste.

Heat a generous amount of perilla oil in a deep pan or wok. Add the boiled ribs and pan-fry them until golden brown. Slightly crisping the surface adds to the deliciousness.

Once the ribs are nicely browned, pour the prepared delicious BBQ sauce evenly over them. It’s important to maintain medium-low heat to prevent the sauce from burning.

If you prefer a spicy kick, feel free to add chopped Cheongyang peppers or bird’s eye chilies at this stage, according to your preference. The sharp spiciness will further deepen the flavor. (Optional)
