Cooking Instructions
Step 1
Rinse the chicken breasts thoroughly under cold water. Carefully slice horizontally into the thicker side of each chicken breast, opening them up like a book. This ensures the marinade penetrates well and cooks evenly.
Step 2
In a bowl, whisk together 2 tbsp olive oil, 1 tsp salt, 1 tbsp minced garlic, and a pinch of black pepper to create the marinade. Generously coat the prepared chicken breasts with this mixture and let them marinate for 30 minutes. Marinating in the refrigerator can enhance tenderness.
Step 3
While the chicken is marinating, prepare the vegetables. Thinly slice the shiitake mushrooms after removing the tough stems. The earthy flavor of mushrooms pairs beautifully with chicken.
Step 4
Prepare the bell peppers in red, orange, and yellow colors. You’ll need about 1/3 to 1/2 of each pepper, depending on their size. Remove the seeds and core, then julienne them into strips suitable for stuffing the chicken.
Step 5
Heat a skillet over medium heat with a generous amount of olive oil. Add the sliced shiitake mushrooms and bell peppers and stir-fry until they are slightly softened. Season with a little black pepper for added aroma.
Step 6
Once the vegetables are partially cooked, add about 1 tablespoon of balsamic glaze to the pan and stir-fry with the vegetables. Allow the glaze to coat the vegetables evenly, releasing a sweet and tangy aroma.
Step 7
Transfer the balsamic-glazed vegetables to a wide plate and let them cool slightly. This makes them easier to handle when stuffing the chicken.
Step 8
Spread the marinated chicken breasts open. Evenly distribute the cooled vegetable mixture over the chicken. Sprinkle a little mozzarella cheese on top for added flavor and visual appeal.
Step 9
Carefully fold the chicken breasts back together, enclosing the vegetables like closing a book. Use kitchen twine to tie the chicken breast securely at intervals to maintain its shape during cooking.
Step 10
Now, it’s time to cook the chicken. Add a little more olive oil to the same skillet used for the vegetables. Place the stuffed chicken breast steak into the pan and carefully roll it around to sear all sides until golden brown. This step helps to lock in the juices.
Step 11
Once the chicken breast is golden brown on all sides, pour the remaining 3 tablespoons of balsamic glaze into the pan. Tilt the pan and spoon the glaze over the chicken, coating it for a glossy finish. The sweet and fragrant glaze will create a beautiful caramelization.
Step 12
Transfer the chicken breast steak to an oven-safe dish or baking sheet. Place it in a preheated oven at 180°C (350°F) and bake for an additional 5 minutes. This final bake ensures the chicken is cooked through while keeping it moist and tender.
Step 13
Carefully remove the kitchen twine from the chicken breast steak after taking it out of the oven. Slice the steak into your desired serving size. Cutting along the original natural seam will reveal the colorful filling beautifully.
Step 14
Arrange the sliced chicken breast steak on a plate. Showcasing the vibrant vegetables and melted cheese inside will make for a visually appealing presentation. Enjoy your delicious and healthy meal!
