  • 3 sheets of Gim (seaweed)
  • 1 bowl of cooked Rice (approx. 200g)
  • 2 fresh Perilla Leaves (깻잎)
  • Mayonnaise, to taste
  • Teriyaki Sauce, to taste

Bacon Glazing Sauce

  • 2 Tbsp Soy Sauce
  • 1 Tbsp Sugar
  • 2 Tbsp Water
  • Pinch of Black Pepper (optional)

Cooking Instructions

Step 1

First, parboil the whole strip of bacon in boiling water for about 5 minutes. This step helps to remove any excess grease and reduce any gamey odor, resulting in a cleaner taste for your kimbap.

After parboiling, thoroughly pat the bacon dry with paper towels. Then, place it in a preheated pan and cook over medium heat until golden brown and slightly crispy on both sides. This will enhance its savory aroma and texture.

To the pan with the cooked bacon, add the soy sauce, sugar, water, and a pinch of black pepper. Simmer over low to medium-low heat, stirring occasionally, until the sauce thickens and coats the bacon beautifully, creating a delicious glaze. Be careful not to burn the sauce.

Lay a sheet of gim on a bamboo rolling mat. Spread a thin, even layer of warm rice over the gim, leaving about a 1-inch border at the top. Avoid packing the rice too tightly or spreading it too thickly, as this can cause the kimbap to break or look unbalanced.

Place one perilla leaf on top of the rice. Arrange the glazed whole bacon strip over the perilla leaf. Starting from the bottom edge, tightly roll the kimbap using the bamboo mat, pressing firmly to ensure it holds its shape.

Slice the rolled kimbap into bite-sized pieces, about 1.5 to 2 cm thick. Arrange them attractively on a serving plate. Finish by drizzling mayonnaise and teriyaki sauce over the kimbap for a visually appealing and incredibly tasty Bacon Kimbap.
