This dish brings together the savory flavors of beef and the earthy aroma of shiitake mushrooms, creating a truly delightful culinary experience. It’s perfect for a special occasion or when you want to impress guests with a homemade gourmet meal.
Main Ingredients
- 200g Ground Korean Beef
- 4 Shiitake Mushrooms
- 1/2 Onion
- 2 Korean Green Chilies (add more if you like it spicy)
- 1 tsp Minced Garlic
- 1 tsp Minced Ginger
- 6 Perilla Leaves (깻잎)
- 15g Unsalted Butter
- 2 Eggs
- Pinch of Salt
- Pinch of Black Pepper
- 5 Tbsp Starch Flour
Special Sauce
- 75ml Soy Sauce
- 150ml Water
- 1/2 Onion
- 1 White part of a Leek
- 1/2 Lemon (juiced)
- 1 Tbsp Sugar
- 5 Tbsp Oligosaccharide (corn syrup)
- Slurry (1.5 Tbsp starch flour mixed with 3 Tbsp water)
- 75ml Soy Sauce
- 150ml Water
- 1/2 Onion
- 1 White part of a Leek
- 1/2 Lemon (juiced)
- 1 Tbsp Sugar
- 5 Tbsp Oligosaccharide (corn syrup)
- Slurry (1.5 Tbsp starch flour mixed with 3 Tbsp water)
Cooking Instructions
Step 1
1. Prepare all your ingredients by washing and measuring them. Having minced garlic, ginger, and chopped vegetables ready beforehand will make the cooking process much smoother.

2. Finely mince the onion and Korean green chilies. Trim the tough stems from the shiitake mushrooms. Wash the perilla leaves and thinly slice them into strips. Their aromatic freshness will greatly enhance the dish.

3. In a large mixing bowl, combine the ground beef, minced onion, green chilies, minced garlic, minced ginger, and 2 eggs. Melt the butter in a separate pan and pour the melted butter into the mixing bowl. Now, knead the mixture well until it becomes cohesive and slightly sticky. Season lightly with salt and pepper.

4. Stuff the shiitake mushroom caps generously with the beef mixture. Dip the stuffed mushrooms first in the beaten egg, then coat them in starch flour. Heat a generous amount of oil in a frying pan over medium heat. Pan-fry the mushrooms, turning them occasionally, until they are golden brown and cooked through. Aim for a crispy exterior.

5. (Make the Special Sauce) In a saucepan, combine soy sauce, water, minced onion, the white part of the leek, lemon juice, sugar, and oligosaccharide. Bring to a gentle simmer over medium-low heat, allowing the flavors to meld. Once simmering, gradually whisk in the starch slurry until the sauce reaches your desired consistency. It should be glossy and flavorful.
