Take out the required amount of Suvimidream IQF chicken breast and thaw it slowly in the refrigerator overnight. Thawing at a low temperature like this minimizes the loss of juices, resulting in a moister chicken breast.

Once fully thawed, lightly rinse the chicken breast under running water and pat it dry. Using a knife, slice the chicken breast thinly to about 0.5cm to 1cm thickness and flatten it out. It’s important to flatten it so it cooks evenly when fried. Flattening it like a steak also makes it easier to coat and serve.

Lightly season the flattened chicken breast on both sides with salt and pepper. Avoid over-seasoning; a subtle taste is best. You can also add garlic powder or herb powder for extra flavor.

Now it’s time to coat the chicken. Prepare three shallow dishes or trays: one with flour, one with beaten eggs, and one with breadcrumbs. First, coat the chicken breast evenly with flour, shaking off any excess. Then, dip it into the beaten egg, ensuring it’s fully coated. Finally, press the chicken firmly into the breadcrumbs, coating it evenly without making the layer too thick for a crispy texture.

Heat enough cooking oil in a deep pan or pot to about 170℃ (338℉). (Test the temperature by dropping a pinch of breadcrumbs; they should sizzle and rise immediately.) Carefully place the coated chicken breasts into the hot oil. Fry them until golden brown and crispy, turning them occasionally. To maintain the oil temperature and ensure even cooking, fry in batches of 2-3 pieces at a time. Fry each side for about 3-4 minutes until cooked through.

Once fried to a golden crisp, remove the chicken cutlets from the oil and place them on a plate lined with paper towels or a wire rack to drain excess oil. This step is crucial to keep them from becoming soggy and to maintain their crispiness.
