Discover my personal recipe for making jjajangmyeon even more delicious than the famous ‘jjapaguri’! With just a few clever additions, instant noodles transform into a satisfying and wholesome meal. I’m excited to share my tips for a healthy and incredibly tasty jjajangmyeon experience.
Ingredients- 1 packet Jjajangmyeon (instant black bean noodles)
- 1 fresh egg
- 50g peas (frozen or canned)
- 1/2 medium onion
- 60g cucumber (about 1/4 cucumber)
- 40g green onion (about 1/4 stalk)
- 0.5 Tbsp oyster sauce
- 1/3 Tbsp gochujang (Korean chili paste)
Cooking Instructions
Step 1
Prepare all your ingredients before you begin. This step makes the cooking process much smoother and more enjoyable.
Step 2
Thinly slice the onion. Julienne the cucumber into thin strips. Finely chop the green onion; set aside for later use.
Step 3
Boil water in a pot, then add the jjajangmyeon flakes, peas, and noodles. Cook until the noodles are fully done. Drain thoroughly and rinse the noodles under cold water once or twice. This step helps to achieve a chewier texture and prevents the noodles from becoming mushy.
Step 4
Heat about 2/3 of the included jjajangmyeon oil packet (or olive oil) in a pan over medium-high heat. Add the chopped green onions and sauté until fragrant. Then, add the sliced onion and peas, and stir-fry for about 30 seconds until the onions soften slightly and become aromatic. Add the cooked noodles to the pan. Pour in about 1/3 cup (approx. 60ml) of water and the jjajangmyeon powder soup base.
Step 5
Add the oyster sauce (1/2 Tbsp) and gochujang (1/3 Tbsp) to the pan. The gochujang adds a subtle depth and richness to the flavor profile.
Step 6
Reduce the heat to medium and stir everything together, allowing the sauce to thicken and coat the noodles. Cook until the liquid has mostly evaporated. Just before turning off the heat, add the remaining jjajangmyeon oil packet for extra gloss and flavor, and mix well.
Step 7
Turn off the heat and give it one final stir. Your upgraded jjajangmyeon is now ready!
Step 8
Prepare a fried egg. Aim for a sunny-side-up with a slightly runny yolk – it’s perfect for mixing into the noodles.
Step 9
Transfer the jjajangmyeon to a serving bowl.
Step 10
Top the noodles with the fried egg and the julienned cucumber. Serve with kimchi or pickled radishes (danmuji) on the side for a complete and delicious meal.
