Cooking Instructions
Step 1
Prepare all the ingredients for the dish. You will need 3 frozen large dumplings. For the jjajang sauce, finely dice 1/4 onion (about 50g) and 1/4 cabbage (about 50g). Measure out 3 tablespoons of black bean paste for stir-frying (about 40g), 1/2 tablespoon of sugar (about 2g), 1/2 tablespoon of potato starch (about 4g), 4 tablespoons of cooking oil (about 15g), and 1/3 tablespoon of minced garlic (about 3g). For garnish, prepare 5g of shredded scallions and 0.02g of toasted sesame seeds. Also, set aside 4g of cooking oil for frying the dumplings.
Step 2
Dice the onion and cabbage for the jjajang sauce. For a pleasant texture, it’s best to dice them into small, noticeable pieces rather than making them completely mushy. Aim for pieces around 5mm in size.
Step 3
Cut the scallions for garnish into approximately 4cm lengths. This will make the finished dish look more appealing.
Step 4
Heat 4 tablespoons of cooking oil (about 15g) in a pan over medium heat. Add 1/3 tablespoon of minced garlic (about 3g) and sauté until fragrant. Then, add the diced onion and cabbage and stir-fry until the vegetables become translucent and slightly softened. This process helps to release the natural sweetness of the vegetables.
Step 5
Once the vegetables are well sautéed, add 6 tablespoons of commercial jjajang sauce (about 60g) and stir-fry with the vegetables for another 1-2 minutes. Alternatively, if using black bean paste, add 3 tablespoons of stir-fry black bean paste (about 40g), 1/2 tablespoon of sugar (about 2g), and 1/2 tablespoon of potato starch (about 4g). Stir constantly to prevent lumps, especially from the starch, until the sauce thickens slightly. The potato starch helps the sauce adhere better to the dumplings.
Step 6
Your delicious jjajang sauce is now ready! Set the pan with the sauce aside for a moment.
Step 7
Now it’s time to fry the dumplings. Add about 4g of cooking oil to a clean pan and place the 3 frozen large dumplings in it. Fry until golden brown on both sides. If the dumplings are very hard from being frozen, you can lightly mist them with water or add 1-2 tablespoons of water to the pan, cover, and steam over low heat for 2-3 minutes until they soften. Once softened, remove the lid, drain any excess water, and then add a little more cooking oil to fry them until golden brown and crispy on all sides. This method ensures the dumplings cook through without bursting.
Step 8
The bottoms of the dumplings are nicely browned and crispy. Your delicious golden fried dumplings are ready!
Step 9
Arrange the 3 perfectly fried dumplings attractively on a serving plate.
Step 10
Generously spoon the warm, freshly made jjajang sauce over the dumplings. Don’t be shy with the sauce – it makes them even more flavorful!
Step 11
Finally, garnish the dumplings with the fresh shredded scallions, arranging them nicely on top.
Step 12
Sprinkle with toasted sesame seeds for a nutty finish, and your Jjajang-Gu-Mandu is complete! These are a fantastic quick snack for kids when they’re hungry, and also make an impressive and easy appetizer for drinks. Enjoy your meal!
