Jeju Black Pork Stir-fry: Just Like Mom Used to Make!
A Special Meal Featuring Chewy Jeju Black Pork
Perfect for holidays, special occasions, or when you’re craving comforting home-cooked meals. This stir-fry is made with the same exquisite Jeju black pork gifted by my mother! Experience the delightful combination of chewy black pork and crisp vegetables, creating a dish with an unparalleled flavor that you can easily recreate at home. It’s absolutely perfect as a side dish for rice or as a delicious appetizer with drinks.
Main Ingredients- 300g Jeju Black Pork (shoulder or leg cut), sliced into bite-sized pieces
- 1/2 Onion, thinly sliced
- 1 stalk Green Onion, cut diagonally
- 1 bunch Enoki Mushrooms, trim the base and separate the strands
Sweet & Spicy Sauce- 6 Tbsp Soy Sauce (use regular soy sauce for a richer umami flavor)
- 2 Tbsp Gochugaru (Korean chili flakes, adjust to your spice preference)
- 2 Tbsp Plum Extract (adds sweetness and shine, a great substitute for sugar)
- 2 Tbsp Minced Garlic (generous amount for a robust garlic aroma)
- Pinch of Black Pepper (essential for removing any gamey odor!)
- 2 Tbsp Sesame Oil (enhances the nutty aroma)
- 1 Tbsp Pineapple Puree or Grated Pineapple (tenderizes the pork and adds a subtle sweetness; can be omitted if unavailable)
- 6 Tbsp Soy Sauce (use regular soy sauce for a richer umami flavor)
- 2 Tbsp Gochugaru (Korean chili flakes, adjust to your spice preference)

Cooking Instructions
Step 1
In a large bowl, combine 6 Tbsp soy sauce, 2 Tbsp gochugaru, 2 Tbsp minced garlic, 2 Tbsp plum extract, a pinch of black pepper, 2 Tbsp sesame oil, and 1 Tbsp pineapple puree. Mix thoroughly to create a delicious sauce. The pineapple puree helps to tenderize the meat, making it extra soft.
Step 2
Prepare 300g of fresh Jeju black pork shoulder or leg, cut into bite-sized pieces. Thinly slice 1/2 an onion and cut 1 green onion diagonally. For the enoki mushrooms, trim off the woody base and then gently separate them into strands.
Step 3
Place the cut black pork into the bowl with the sauce. Gently mix the pork and sauce together with your hands, ensuring every piece is well-coated. Let it marinate for about 10 minutes to allow the flavors to penetrate deeply into the meat.
Step 4
Heat a pan over medium-high heat. Add the marinated black pork to the pan and stir-fry until the surface is lightly browned and the juices start to appear. Stir occasionally to prevent sticking and burning.
Step 5
Once the pork is almost cooked through, add the prepared vegetables (onion, green onion, and enoki mushrooms) to the pan. Stir-fry everything together for another 2-3 minutes, just until the vegetables are slightly softened and well combined with the pork.
Step 6
Vegetables cook very quickly, so it’s important to add them only when the pork is nearly done and stir-fry rapidly. Be careful not to overcook the vegetables until they become too mushy. Once all ingredients are well integrated, turn off the heat. A final drizzle of sesame oil will further enhance the aroma.
Step 7
Transfer the delicious black pork stir-fry to a serving dish or pile it generously over a bowl of hot rice. It’s also wonderful when wrapped in lettuce leaves with rice! Complete your special meal with this delightful dish that the whole family can enjoy.
