Thanks to my husband who loves Japchae, I’ve become a master at making it quickly! I’ll share my recipe for Japchae that stays perfectly chewy, even after sitting for a while. This is a dish that brings festive cheer and can be surprisingly easy to make with the right tips!

Main Ingredients

  • 1 handful Japchae glass noodles (about 100g)
  • 1/2 medium onion
  • 1/3 medium carrot
  • 1 bell pepper (e.g., red, yellow)
  • 100g beef (for stir-frying or bulgogi)
  • 6 dried shiitake mushrooms
  • 2 large eggs
  • 1/2 bunch chives (about 30g)
  • 1 tsp minced garlic

For Stir-Frying Each Ingredient

  • A little cooking oil
  • A pinch of salt
  • A pinch of sugar (optional)
  • A little soy sauce

Cooking Instructions

Step 1

Prepare one handful (about 100g) of Japchae glass noodles. Bring a pot of water to a rolling boil, add the noodles, and cook over high heat for about 8-10 minutes. It’s crucial to cook them until they become translucent and chewy.

Once cooked, drain the noodles and rinse them thoroughly under cold running water. Then, soak them in cold water. This step helps to maintain their chewy texture and remove excess starch, preventing them from becoming soggy.

Drain the noodles well in a colander. Ensure all excess water is removed, as remaining moisture can make the Japchae bland and clumpy.

Now, let’s give the noodles a delicious glaze. In a pan, combine 3 Tbsp cooking oil, 7 Tbsp soy sauce, and 7 Tbsp sugar. Bring to a simmer over medium heat and cook for 5 minutes. Then, reduce the heat to low and continue cooking for another 3 minutes. This process infuses the noodles with flavor and helps them retain their chewy texture.

Prepare the vegetables. Thinly slice 1/2 medium onion and stir-fry it in a pan with a little cooking oil and a pinch of salt until translucent. Slice 1/3 medium carrot and 1 bell pepper (use different colors for visual appeal) into thin strips, and stir-fry them separately using the same method.

For the egg garnish, whisk 2 large eggs, remove the stringy bits, and cook them into thin omelets. Once cooled, slice them into thin strips. Trim the tough stems from 6 dried shiitake mushrooms and slice them thinly. Slice 100g of beef into thin strips suitable for stir-frying.

Marinate the beef and shiitake mushrooms. In a bowl, combine 1 Tbsp soy sauce, 1 Tbsp sugar, and 1/2 tsp minced garlic. Mix well with the beef and mushrooms, and let them marinate for a few minutes. Then, heat a little cooking oil in a pan and stir-fry the beef and shiitake mushrooms separately. Stir-frying the shiitake separately helps to enhance their earthy aroma.

Prepare the chives. Cut 1/2 bunch (about 30g) of chives into bite-sized pieces. Blanch them briefly in boiling water, then rinse under cold water and squeeze out all excess moisture. Gently toss the chives with a pinch of salt and a little sesame oil.

It’s time to combine everything! In a large bowl, add the glazed glass noodles, stir-fried vegetables (onions, carrots, bell peppers), sliced egg garnish, stir-fried beef and shiitake mushrooms, and the seasoned chives. Finish with a drizzle of sesame oil and a sprinkle of toasted sesame seeds. Gently toss everything together until well combined. Your delicious Japchae is ready!
