You’ll be surprised by how delicious this is! Introducing a recipe for sweet and sour ‘So-tteok So-tteok’ that’s incredibly tasty and easy to make with simple ingredients. It’s perfect for home parties, snack time, or as a delightful accompaniment to drinks.
Main Ingredients- Tteokbokki rice cakes (rice or wheat cakes are okay) 16 pieces
- 3 sheets of fish cake (eomuk)
- 16 slices of ham (cut into cubes or similar size to the rice cakes)
Cooking Instructions
Step 1
Prepare the tteokbokki rice cakes. If they are hard, briefly blanch them in warm water until softened. It’s crucial to drain them completely to prevent oil splattering when frying. Pat them dry thoroughly with paper towels.
Step 2
Cut the fish cakes and ham into pieces roughly the same size as the rice cakes (about 2-3 cm). For the ham, cut it into cubes. For the fish cake, you can fold it in half and cut it to a similar length as the rice cakes.
Step 3
Place a rice cake on a piece of fish cake and roll it up. Tightly rolling the fish cake around the rice cake will help maintain a nice shape and prevent it from unraveling when threaded onto the skewer.
Step 4
Now, prepare the skewers. Thread the rice cakes, ham, (rolled fish cake), rice cake, and ham onto the skewer in sequence. Repeat this pattern of rice cake, ham, and fish cake 2-3 times to create the appetizing ‘So-tteok So-tteok’ appearance. Ensure the rice cakes are securely on the skewer so they don’t fall off.
Step 5
Let’s make the delicious sauce. In a bowl, combine 2 Tbsp ketchup, 1 Tbsp soy sauce, 1 Tbsp gochujang, and 2-3 Tbsp sugar. Mix well. Taste and if the sourness is too strong, add a little more sugar to balance the flavors according to your preference. Stir until all ingredients are fully incorporated. The sauce doesn’t need to be thick at this stage, as it will be simmered later.
Step 6
Pour a generous amount of cooking oil into a pan. Heat the pan over medium heat. Place the prepared ‘So-tteok So-tteok’ skewers in the hot oil and fry them until golden brown and slightly crispy. Turn them occasionally to ensure even cooking. They are ready when the rice cakes puff up slightly and the exterior becomes nicely browned.
Step 7
Dip the well-fried ‘So-tteok So-tteok’ skewers into the prepared sauce, or pour the sauce into the pan and simmer briefly with the skewers, coating them evenly. Once the sauce has coated the ‘So-tteok So-tteok’ thoroughly, it’s ready! Enjoy it hot for the best flavor.
