Cooking Instructions
Step 1
Begin by bringing a generous amount of water to a boil in a pot. Add 1 teaspoon of salt and 1 tablespoon of olive oil to the boiling water. Once boiling, add 150g of fusilli pasta and cook for approximately 12 minutes, or according to package directions. It’s a good idea to test a piece of pasta to ensure it’s cooked to your desired al dente texture. While the pasta is cooking, thoroughly wash 3 cups of fresh baby greens under running water and spin them dry using a salad spinner or pat them gently with paper towels. This step is crucial to prevent the salad from becoming watery. You don’t need to cover the pot while boiling the pasta.
Step 2
Once the fusilli is cooked, drain the hot water and immediately rinse the pasta under cold running water. This rapid cooling helps to stop the cooking process, prevents the pasta from sticking together, and gives it a delightful chewy texture. Make sure to drain the water thoroughly. Letting it sit in a colander for a few minutes will ensure excess water is removed.
Step 3
In a mixing bowl, combine 100g of mayonnaise with 1 tablespoon of sugar (brown sugar will add a lovely depth of flavor), 1 teaspoon of salt, 1/2 teaspoon of black pepper, and 1/2 tablespoon of mustard sauce. Whisk everything together until you have a smooth, creamy, and well-seasoned dressing. Adjust the amount of mustard sauce to your preference.
Step 4
Add the well-drained fusilli pasta to the bowl with the dressing. Gently toss the pasta to ensure every piece is evenly coated with the mayonnaise mixture. Once the pasta is nicely coated, arrange the fusilli salad onto a serving plate. Artfully place the fresh baby greens on top for a vibrant presentation. For extra flavor and texture, consider adding ingredients like hard-boiled eggs, ham, or corn kernels.
