It’s suddenly raining! I decided to make a side dish for Sunday lunch. Spam is a favorite among children, so I generously added plenty of it. This dish combines the tangy zest of kimchi with the savory richness of spam, making it a perfect companion for a bowl of warm rice. It’s a simple yet incredibly delicious recipe that will surely satisfy your family’s cravings.

Ingredients
  • 2 cans Spam (approx. 400g each)
  • 1 head of ripe kimchi (or about 2 cups kimchi)
  • 2 Tbsp sesame oil
  • A handful of chives (about 30g)
  • 1 Tbsp sugar

Step 1

Let’s begin making a delicious Spam Kimchi Stir-Fry that anyone can easily follow!

Step 2

Roughly chop the ripe kimchi into bite-sized pieces. If it’s too sour, you can gently squeeze out some of the juice before chopping. Avoid chopping it too finely to ensure a pleasant chewy texture.

Step 3

Open the Spam cans and drain any liquid. Cut the Spam into uniform cubes, about 1.5 cm in size. Cubing it nicely will make the dish look more appealing.

Step 4

Heat a pan over medium heat and add 2 tablespoons of sesame oil. Add the chopped kimchi and stir-fry for about 5-7 minutes until it becomes slightly translucent and tender. Stir-frying the kimchi thoroughly mellows its sourness and enhances its savory flavor.

Step 5

Once the kimchi is well sautéed, add the cubed Spam to the pan. Continue to stir-fry together for another 3-5 minutes until the Spam is lightly browned and well combined with the kimchi. The rendered fat from the Spam will meld beautifully with the kimchi, creating a richer taste.

Step 6

Finally, it’s time to add the chives for a fresh aroma. Finely chop the washed chives and add them to the pan along with 1 tablespoon of sugar to balance the flavors. Stir-fry briefly for about 30 seconds to 1 minute, just until the chives are incorporated. Overcooking the chives will diminish their fragrance.

Step 7
