  • Mini bell pepper, 1 pc (using different colors adds visual appeal)

Sauce Ingredients

  • Ketchup, 2 Tbsp
  • Gochujang (Korean chili paste), 0.5 Tbsp
  • Vinegar, 1 tsp
  • Allulose, 2 Tbsp (or corn syrup/oligo syrup)

  • Black pepper, a pinch
  • Sesame seeds, 0.5 Tbsp

Cooking Instructions

First, prepare all the ingredients for today’s dish. Wash the carrots and bell peppers under running water and pat them dry.

Dice the vegetables into bite-sized pieces. Remove the seeds from the mini bell pepper and chop it finely. Finely mince the carrot as well. (You can chop them even smaller if serving to children).

The key to preparing Vienna sausages! Make lengthwise cuts, leaving about 0.5cm at the bottom. For each sausage, make cross-shaped cuts, ensuring not to cut all the way through. This will help them unfurl beautifully as they cook.

Lightly blanch the scored Vienna sausages in boiling water. This step helps remove excess oil from the surface, resulting in a chewier texture. After blanching, quickly rinse them under cold water and drain thoroughly before proceeding.

Now, let’s stir-fry! Heat a generous amount of cooking oil in a pan over medium heat. Add the scored Vienna sausages and fry them for about 30 seconds to 1 minute, until the surface is slightly golden and crispy. They should be cooked until slightly ‘fried’ in texture. Once crispy, transfer them to a separate plate and set aside. (Be careful to avoid oil splatters while frying).

In the same pan (without discarding the oil), add the minced garlic (optional) and sauté over low heat until fragrant. Once the garlic is aromatic, add the ketchup, gochujang, allulose, and vinegar. Bring the sauce to a gentle simmer. Once the sauce is bubbling, add the prepared carrots and mini bell peppers and stir-fry them together.
