This is a Goji Berry and Jujube Jangjorim, known to be beneficial for nervous exhaustion. We’ve simmered Goji berries and jujubes in water, then added soy sauce to create a delicious braised dish. Main Ingredients

  • 60g Dried Goji Berries
  • 18 Red Dates (Jujubes)
  • 6-7 Hard-boiled Eggs

Braising Sauce

  • 600cc Water (approx. 3 cups)
  • 1/2 to 1 cup Soy Sauce (adjust to taste)
  • 2 Tbsp Corn Syrup or Oligosaccharide

Cooking Instructions

First, thoroughly wash the goji berries and red dates. Rinse them lightly under running water, then gently pat them dry with a paper towel. Now, place them in 600cc of water and let them soak for about 30 minutes. This soaking process helps to extract more flavor and aroma from the ingredients into the water.

Boil the eggs until they are hard-boiled. Place the eggs and a pinch of salt in a pot of water. Once the water begins to boil, continue to cook for about 15 minutes. Immediately transfer the boiled eggs to cold water to cool them down. Cooling them in cold water makes the shells much easier to peel.

Bring the soaked goji berries and dates, along with their soaking water, to a boil over high heat in a pot. Once boiling, reduce the heat to medium-low and simmer gently until the ingredients become tender. Some people remove the date seeds while simmering, but since they are not toxic, you can leave them in if you prefer. (Tip: Removing the seeds can result in a softer texture.)

Mash the red dates as they simmer to help release more of their pulp, deepening the flavor of the liquid. When the liquid has reduced to about two-thirds of its original volume, strain the mixture through a sieve or fine-mesh strainer to separate the clear liquid from the solids. This step ensures a clean-tasting braising liquid.

Pour the strained goji berry and jujube liquid back into the pot. Add the soy sauce and bring it to a simmer again. Maintain medium-low heat and allow the soy sauce to penetrate the ingredients.

Once the soy sauce liquid has reduced and thickened slightly, add the corn syrup (or oligosaccharide) and continue to simmer until it achieves a glossy finish. The syrup adds a subtle sweetness and a beautiful sheen to the jangjorim. Be careful to prevent it from sticking to the bottom of the pot, and simmer until you reach your desired consistency.
