This Sliced Duck Ssam-bap was the most popular dish at my husband’s birthday party! It’s a special recipe with a creative touch from my daughter, who knows her dad’s taste perfectly. Let me share this delightful dish with you. ^^

Main Ingredients

  • 2 bowls of cooked rice
  • 1 pack Sliced Duck Ssam (approx. 200-250g)
  • 1/2 small carrot
  • 1/2 small onion
  • 1/2 piece leek
  • 1/4 bell pepper (any color)
  • A little blanched chives (for garnish)
  • A little wasabi (optional)

Seasoning & Stir-fry Ingredients

  • Pinch of salt
  • Pinch of black pepper
  • 2 Tbsp oyster sauce
  • 1 Tbsp sesame oil
  • A little toasted sesame seeds

Cooking Instructions

Step 1

First, prepare the vegetables for the ssam-bap. Wash the carrot, onion, leek, and bell pepper thoroughly.

Finely mince the prepared carrot, onion, leek, and bell pepper. Mincing them finely helps them blend well with the rice and improves the texture. Using a food processor can make this step easier.

Heat a pan over medium heat and lightly grill the sliced duck. Cook just until it’s lightly browned and slightly crisp, being careful not to render too much fat.

Using the rendered duck fat in the pan, add the minced vegetables. Season lightly with salt and pepper and stir-fry over medium heat until fragrant. It’s best to stir-fry them just until they soften slightly.

Once the vegetables are lightly stir-fried, add the two bowls of warm cooked rice and 2 tablespoons of oyster sauce. Use a spatula to gently break up the rice and stir-fry for another 2-3 minutes over medium heat, ensuring the oyster sauce is well incorporated with the rice and vegetables.

Finally, just before turning off the heat, add 1 tablespoon of sesame oil and a little toasted sesame seeds. Mix gently. The nutty aroma of sesame oil will enhance the flavor.

Now, all the components for wrapping the ssam-bap are ready. We have the delicious duck fried rice, blanched chives for garnish, and a touch of wasabi for a zesty kick. Let’s get ready to assemble!

Take a portion of the fried rice, about the size of a sushi ball, and shape it into a compact oval or ball. Apply a small dab of wasabi on top for a pleasant spicy contrast. If serving to children, omit the wasabi or use a very small amount.

Wrap the shaped rice ball with a slice of duck. Neatly fold in the edges and tie it gently with a blanched chive stem to hold its shape. If chives are unavailable, thinly sliced green onions or other delicate vegetables can also be used.

Arrange the beautifully crafted duck ssam-bap on a serving plate for an elegant presentation. My husband really loves wasabi sauce, and my daughter’s thoughtful addition of a little wasabi made him incredibly happy. Out of all the dishes served, my son and I agreed this was the most delicious! It was a truly satisfying and special meal. ^^
