Main Ingredients
  • 1 lb (approx. 600g) Whole Pork Belly
  • 2 Tbsp Chinese Black Bean Paste (Chunjang)
  • 1/2 head Cabbage
  • 1 Red Bell Pepper
  • 1 Yellow Bell Pepper
  • 1 head Broccoli
  • 1 stalk Green Onion
  • 1 Korean Chili Pepper (or similar)
  • 1 handful Shiitake Mushrooms
  • 1 Tbsp Minced Garlic
  • 2 Tbsp Cooking Wine (Mirin or similar)
  • 2 Tbsp Oyster Sauce

Cooking Instructions

Step 1

Score the whole pork belly with a knife. Season both sides generously with salt and pepper. Preheat your air fryer to 180°C (350°F) and cook the pork belly for 10 minutes per side, for a total of 20 minutes, until golden brown. This process helps render excess fat, resulting in a more tender and flavorful pork.

Step 2

While the pork is cooking, prepare the vegetables that will enhance the flavor of your Hui Guo Rou. Chop the cabbage into large pieces, cut the green onion into long sections, and slice the bell peppers, broccoli, and shiitake mushrooms into visually appealing sizes. Tip: Don’t chop the vegetables too finely; cutting them into large pieces similar to the pork belly will improve the texture. Using plenty of cabbage is key for its crispness and sweetness.

Step 3

Once the pork belly is cooked, remove it from the air fryer and let it cool slightly. Then, slice it into bite-sized pieces, about 1.5 cm thick. Pre-slicing makes it easier to stir-fry with the vegetables later.

Step 4

Heat a deep pan over medium heat and add a generous amount of cooking oil. Add the long-cut green onion, minced garlic, and Korean chili peppers (or other chili peppers) to release their fragrance without burning. Once fragrant, add the sliced pork belly and stir-fry until it sizzles and becomes slightly crispy. As the pork browns, deglaze the pan by pouring soy sauce around the edges. (approx. 1 swirl of soy sauce)

Step 5

Once the pork belly starts to render its delicious fat, add all the prepared vegetables (cabbage, bell peppers, broccoli, shiitake mushrooms) to the pan. Stir-fry over high heat for a short time to maintain the vegetables’ crispness. It’s important not to overcook them.

Step 6

When the vegetables are slightly wilted, add 2 tablespoons of cooking wine to help remove any unwanted odors and enhance the flavor. Stir-fry briefly. Then, add 2 tablespoons of oyster sauce, 2 tablespoons of Chinese black bean paste (Chunjang), a tiny pinch of sugar (adjust sweetness to your preference), and a dash of pepper. Stir everything together quickly until well combined and coated.

Step 7

Serve the beautifully stir-fried Hui Guo Rou onto a plate. Your delicious homestyle Chinese-style Hui Guo Rou is ready! This dish is perfect as a side dish for rice or as a delightful appetizer with drinks. Enjoy the wonderful balance of sweet and savory flavors!
