Hello everyone! Today, we’re going to make delicious and fresh abalone sashimi using vibrant, live abalone. Abalone has been cherished as a premium ingredient since ancient times, rich in vitamins and minerals with an exceptional taste and nutritional value. The chewy texture and deep ocean flavor of abalone sashimi make it a perfect dish to share with family on special occasions. Thanks to a thoughtful gift from my dear neighbor, I was able to prepare this special abalone sashimi that my family thoroughly enjoyed.   • 13 live abalones
  • Gochujang sauce (for dipping), as needed

Cooking Instructions

This is the first step to prepare the fresh live abalones. Prepare a lightly salted water solution and place the abalones in it. Use a toothbrush or a cleaning brush to scrub the shells and bodies of the abalones thoroughly. Rinse them under running water after scrubbing to remove any dirt or debris, and then pat them dry with paper towels.

Now, let’s separate the abalone meat from the shell. Flip the abalone over and locate the thinner part where the shell and meat meet. Gently insert a spoon into this section and carefully slide it between the shell and the meat to detach them. Be cautious to avoid slipping the spoon and work gently to separate the meat.

This step involves removing the abalone’s innards. The innards typically come in yellow (usually male) and green (usually female) colors. While some people enjoy eating the innards, most remove them for a cleaner taste in sashimi. Carefully detach the innards attached next to the abalone meat you just separated with the spoon. If you prefer to eat the innards, make sure they are cleaned thoroughly before serving them alongside the sashimi.

Let’s remove the abalone’s teeth. On the upper part of the abalone, where its mouth was located, you’ll find a round, dark area. Make a small cut in this area with a knife, and you’ll see the hard, white abalone teeth inside. These teeth can be uncomfortable to chew, so use a knife or tweezers to carefully remove them.

The abalone teeth have now been cleanly removed. Removing the teeth ensures a perfectly smooth and enjoyable texture when eating the abalone sashimi. Double-check that the teeth are completely gone before proceeding to the next step.

Finally, it’s time to slice the abalone meat. Place the abalone meat with the white side facing up. Using a sharp knife, make thin cuts, almost like slicing it into a fillet. After making these shallow cuts, slice the abalone into your desired serving size. Making fine cuts will result in an even more tender texture when chewed. Arrange the sliced abalone sashimi beautifully on a plate and serve with gochujang sauce for a delightful experience!
