Main Ingredients- 12.3 oz (350g) prepared croaker fish
- A small piece of daikon radish (about 1/4 of a small radish)
- 1 broth cube (or anchovy-kelp broth)
- 1/4 block of firm tofu
- 1/4 zucchini
- 1/2 pack enoki mushrooms
- 1 stalk of green onion
- A handful of crown daisy (ssukgat)
Cooking Instructions
Step 1
First, prepare about 350g of croaker fish. Separate the flesh from the bones, then cut the fish into large, bite-sized pieces. Make shallow cuts on the fish slices; this helps the seasonings penetrate better and keeps the fish looking beautiful as it cooks.
Step 2
In a deep pot, add plenty of water. Add about 1/4 of a small daikon radish for a refreshing taste and 1 broth cube. Bring to a rolling boil over high heat to create a clear broth first. (Alternatively, you can use broth made by simmering anchovies and kelp. Simmer for about 10 minutes to develop a deep flavor.)
Step 3
Once the broth is boiling, remove and discard the daikon radish and broth cube. Carefully add the prepared croaker fish. Then, arrange the diced firm tofu, semi-moon shaped zucchini slices, separated enoki mushrooms, and diagonally sliced green onions around the fish. Turn the heat up and let it simmer until the ingredients start to bubble gently.
Step 4
As the ingredients cook, a delicious aroma will begin to fill your kitchen. At this point, add 1 tablespoon of fish sauce or soup soy sauce to season. The key is to highlight the fish’s natural, delicate flavor, so start with a lighter seasoning and adjust to your preference.
Step 5
Finally, add 1/2 tablespoon of minced garlic. For an optional spicy touch, add the sliced Korean green chili pepper, and the sliced red chili pepper for vibrant color. Top generously with fresh crown daisy (ssukgat). Simmer for another moment until the soup is ready.
