Ingredients

  • 8 Cheonhyehyang oranges
  • Honey (adjust to taste)
  • Sugar (adjust to taste)
  • Water
  • Baking soda (for washing Cheonhyehyang)
  • Vinegar (for washing Cheonhyehyang)

Cooking Instructions

First, wash the Cheonhyehyang oranges thoroughly under running water. Using baking soda and vinegar is highly recommended to remove any residual pesticides or debris from the peel. Place the Cheonhyehyang in a bowl, sprinkle with baking soda, gently rub to clean, then soak briefly in a diluted vinegar solution before rinsing. Finally, pat them completely dry with a clean kitchen towel.

Trim the ends of the clean Cheonhyehyang oranges. Without peeling, slice them into rounds approximately 1cm thick. It’s a good idea to carefully remove the seeds using a toothpick or skewer to ensure a smoother texture for the candies and chips.

In a pot, combine the sliced Cheonhyehyang, honey, and a little sugar and water. (Adjust the amount of honey and sugar based on the sweetness of the oranges and your preference.) Cook over medium-low heat for about 30 minutes, allowing the Cheonhyehyang to soften and the liquid to reduce into a syrup. Stir gently occasionally to prevent the fruit pieces from breaking apart.

Remove the pot from the heat after simmering for 30 minutes. Strain the Cheonhyehyang pieces using a sieve to drain the excess liquid. Arrange the fruit pieces in a single layer on a rack or plate and let them cool slightly.

Once the Cheonhyehyang pieces have cooled slightly, sprinkle them generously with sugar, coating them evenly. Place the sugar-coated Cheonhyehyang pieces onto a dehydrator tray, ensuring they don’t overlap. Drying them like this will result in chewy candies.

Take some of the remaining Cheonhyehyang and slice them to the same 1cm thickness as in step 4. Slice the rest of the Cheonhyehyang slightly thinner, about 0.8cm thick. Arrange these thinner slices on a dehydrator tray, making sure they do not overlap. These thinner slices will become crispy chips when dried.

Place the prepared Cheonhyehyang candies and chips in the dehydrator. Set the temperature according to your dehydrator’s specifications and dry them thoroughly. The candies should reach a chewy texture, and the chips should be dried until all moisture is removed and they become firm. The drying time can vary depending on the dehydrator’s performance and the thickness of the orange slices, so check them periodically and adjust as needed.
