Today, I’ve prepared a simple ramen dish: Hong Kong-style tomato ramen. You might wonder, ‘Tomatoes in ramen?’ but once you taste it, you’ll be hooked by its spicy, sour, and refreshing broth! This recipe is perfect for a quick meal and a great way to cure a hangover.

Ingredients

  • 1 packet of ramen (choose your favorite kind)
  • 8 cherry tomatoes (ripe and fresh)
  • 1/4 onion (adds depth to the broth)
  • 5cm green onion (for a fragrant finish)
  • 1 Tbsp minced garlic (enhances flavor)
  • 1 Tbsp chili powder (adjust for spiciness)
  • 1 Tbsp vinegar (adds a tangy zest)
  • 1 egg (for a smoother texture)

Cooking Instructions

Step 1

First, prepare your ingredients. Cut the cherry tomatoes in half, removing the stems. Finely dice the onion and thinly slice the green onion. Having everything prepped makes the cooking process much smoother.

Bring 450ml of water to a rolling boil in a pot over high heat. Once boiling, add the ramen soup base and stir until dissolved. Then, add the halved cherry tomatoes and diced onion, and bring it back to a boil. Cook until the onion becomes translucent.

As the broth comes to a boil, use a spoon or ladle to gently mash the cherry tomatoes in the pot. This will release their flavor and color into the broth, creating a smoother taste. You don’t need to mash them completely.

Once the tomatoes are slightly mashed, add the ramen noodles. Gently loosen the noodles so they don’t stick together as they cook. Ensure they are spread out evenly in the pot.

When the noodles are almost cooked, add 1 tablespoon of chili powder and 1 tablespoon of vinegar. Crack in the egg and top with the sliced green onions. Your delicious Hong Kong-style tomato ramen is ready! You can whisk the egg before adding it or let it poach gently, depending on your preference.
