Main Ingredients
  • 50 medium-sized shrimp (frozen or fresh)
  • 5 cloves garlic
  • 0.5 Tbsp butter
  • 2 Tbsp olive oil

Shrimp Marinade
  • 1 Tbsp cooking wine (Cheongju or Mirin)
  • A pinch of black pepper

Special Chili Sauce
  • 2 Tbsp ketchup
  • 1 Tbsp soy sauce
  • 1 Tbsp vinegar
  • 1 Tbsp sugar
  • 1 Tbsp red pepper flakes

Cooking Instructions

Step 1

First, prepare the shrimp. If using frozen shrimp, thaw them under cold running water or slowly in the refrigerator. After thawing, pat them dry thoroughly with paper towels. This prevents excess moisture when stir-frying.

Step 2

Let’s remove any gamey smell from the shrimp using the marinade ingredients. Place the prepared shrimp in a bowl, add 1 tablespoon of cooking wine (or Mirin) and a pinch of black pepper. Gently mix with your hands and let it marinate for about 5 minutes. This marination significantly enhances the shrimp’s flavor.

Step 3

Now it’s time to make the special sauce, the heart of this sweet and spicy chili shrimp! In a small bowl, combine 2 tablespoons of ketchup, 1 tablespoon of soy sauce, 1 tablespoon of vinegar, 1 tablespoon of sugar, and 1 tablespoon of red pepper flakes. Stir well with a spoon until the sugar dissolves. This sauce ratio, inspired by Baek Jong-won’s Shrimp Box, is fantastic! Once this sauce is ready, you’re halfway to completing the dish.

Step 4

We’re ready to stir-fry. Heat a frying pan over medium heat and add 2 tablespoons of olive oil. Add 5 cloves of thinly sliced garlic and sauté until they turn golden brown and release their aroma into the oil. (Tip: You can also use 1 tablespoon of minced garlic. Be careful not to burn the garlic by adjusting the heat.)

Step 5

Once the garlic is a beautiful golden color, add all the marinated shrimp to the pan and stir-fry. Cook until the shrimp turn pink and start to appear cooked.

Step 6

When the shrimp are almost cooked through and have turned pink, pour in all the prepared chili sauce. Stir well to ensure the sauce coats the shrimp evenly.

Step 7

As the sauce begins to coat the shrimp nicely, add 0.5 tablespoon of butter and let it melt. The butter adds richness and a lovely sheen to the dish, so don’t skip it! Quickly mix everything together until well combined.

Step 8

Once all ingredients are well combined and glossy, turn off the heat and finish. Chili shrimp should be cooked quickly over high heat to maintain a firm, juicy texture and prevent the sauce from burning. Stir-fry for about 30 seconds to 1 minute for the best result! ^^
