Homemade Whole Wheat Cold Pasta Salad

I’m making an effort to eat healthily, so I’m doing my best to enjoy vegetables deliciously! Pasta recipes are very diverse and great for cooking vegetables deliciously! As summer approaches, I’m sharing a cold pasta recipe that anyone can easily make. Enjoy this refreshing and healthy dish!

Dough

  • 200g Whole Wheat Flour
  • 100g Water

Ingredients

  • 1/2 Zucchini
  • 1/2 Carrot
  • 20 Black Olives
  • 20 Cherry Tomatoes

Sauce

  • 100ml Extra Virgin Olive Oil
  • 10g Basil
  • 20g Pine Nuts
  • 100g Parmesan Cheese (can be substituted with vegan alternative)
  • 1/2 tsp Salt

Cooking Instructions

Step 1

To achieve a texture similar to durum wheat pasta, using whole wheat flour is recommended for a deeper, healthier flavor. It’s also a great way to incorporate more dietary fiber.

This is a no-egg pasta, inspired by the Puglia region of Italy, similar to ‘orecchiette’. You can easily make the dough using just water and flour, much like making Korean ‘sujebi’ (hand-pulled dough). (*Orecchiette means ‘little ears’ in Italian, named after the pasta’s shape!)*

Wrap the dough tightly in plastic wrap and let it rest for about 15 minutes at room temperature. This allows the gluten to relax, making the dough easier to handle.

Wash the zucchini thoroughly, remove the seeds, and dice it into small, bite-sized cubes (about 0.5 cm). This size is easy for everyone to eat.

Lightly oil a pan and add the diced carrots. Season with a pinch of salt and sauté over medium-low heat until the carrots are slightly tender but still have a slight bite. Avoid overcooking to maintain their crispness.

Dice the zucchini into similarly sized cubes, about 0.5 cm, matching the size of the carrots. Uniformity in size ensures even cooking and a pleasant texture when eaten together.

In another lightly oiled pan, add the diced zucchini. Season with a pinch of salt and sauté just until the edges appear slightly softened and glossy. Immediately remove from the pan to prevent overcooking and preserve its crunch.

Pit the black olives and slice them in half. Keeping them partially whole helps maintain their shape and allows the dressing to coat them well.

Remove the stems from the cherry tomatoes and cut them into quarters. This size will be similar to the diced zucchini and carrots, creating a balanced bite.

Combine the sautéed carrots and zucchini, halved olives, and quartered cherry tomatoes in a large bowl. Gently toss them together and refrigerate or keep in a cool place for a short while. Chilling the vegetables enhances their freshness.

Roll the rested dough into a long, thin rope, similar to ‘garaetteok’ (Korean rice cakes). Cut it into approximately 2 cm pieces. Then, press the center of each piece firmly with your thumb to create the characteristic ‘orecchiette’ shape. This indention helps capture the sauce beautifully.

Bring a large pot of generously salted water to a rolling boil. Add the pasta and cook for about 5-6 minutes, or until al dente. The pasta should float to the surface and be tender. Be careful not to overcook.

In a food processor or blender, combine the fresh basil leaves, pine nuts, extra virgin olive oil, Parmesan cheese, and 1/2 tsp salt. Blend until smooth to create a fragrant and flavorful homemade pesto sauce.

Drain the cooked pasta and quickly rinse it under cold water just once to stop the cooking process. Transfer the chilled vegetables and the prepared pesto sauce to the bowl with the pasta. Gently toss everything together until well combined, ensuring the pasta is evenly coated without clumping.

Arrange the tossed pasta salad attractively in a large serving bowl. Garnish with a few large basil leaves for a final touch of freshness and aroma. Enjoy your delicious and healthy creation!
