Ingredients
  • 500g heavy whipping cream, chilled
  • 120g whole milk powder (skim milk powder can be used if serving to children)
  • 100g granulated sugar (adjust sweetness to your preference)
  • 10g vanilla extract (you can use scraped seeds from a natural vanilla bean for extra flavor)
  • 240g milk (regular whole milk)
  • 25g cocoa powder (unsweetened recommended)

Cooking Instructions

Step 1

In a large bowl, combine the chilled heavy whipping cream (500g), whole milk powder (120g), and granulated sugar (100g). Mix them well to prevent lumps of milk powder and sugar.

Step 2

Using an electric mixer or a whisk, whip the mixture on medium-high speed for about 1 minute and 30 seconds. The goal is not to make it too stiff, but rather to reach a point where the cream thickens slightly and has a smooth, flowing consistency – just before firm peaks form.

Step 3

Add the vanilla extract (10g) for a fragrant aroma. Using high-quality vanilla extract will significantly enhance the ice cream’s flavor.

Step 4

Slowly pour in the milk (240g) while whisking gently with the mixer on low speed or a hand whisk for about 30 seconds. Be careful not to overmix, as it could cause the mixture to separate.

Step 5

Your basic vanilla ice cream base is now ready! Carefully divide about half of the vanilla ice cream mixture into a freezer-safe container. Lightly smooth the surface.

Step 6

To the remaining mixture, sift the cocoa powder (25g) to remove any clumps. Since cocoa powder can be dusty, use the lowest speed setting on your electric mixer or gently fold with a spatula for 20-30 seconds until the chocolate flavor is well incorporated. The key is to mix gently to avoid lumps of cocoa powder.

Step 7

Pour the rich chocolate ice cream mixture into another freezer-safe container. Ensure the surface of both containers is flat, then cover them tightly with lids or plastic wrap. Freeze for at least 6 hours, or until completely solid. Freezing overnight is recommended.

Step 8

After freezing for at least 6 hours, you can scoop the ice cream directly and enjoy it. You’ll experience the wonderfully chewy yet smooth texture of homemade ice cream.
