Cooking Instructions
Step 1
In a small saucepan or pot, combine all the sauce ingredients: 3 tablespoons of soy sauce, 3 tablespoons of water, 1 tablespoon of minced garlic, 3 tablespoons of sake (or mirin/soju), 1 tablespoon of sugar, and 1 tablespoon of oligosaccharide. Combining everything at once makes the cooking process much smoother.
Step 2
Place the saucepan over low heat and bring it to a gentle simmer. It’s crucial to stir continuously with a spatula or whisk to prevent the sauce from sticking to the bottom or boiling over. Constant stirring ensures an even flavor distribution and prevents burning.
Step 3
Let the sauce simmer gently over low heat for about 15 minutes. You’ll notice it gradually reducing and thickening, developing a beautiful glossy sheen. The sauce is ready when it coats the back of a spoon or has a slightly viscous consistency when drizzled.
Step 4
This recipe yields about half a small jar of delicious teriyaki sauce. It’s best to make smaller batches to ensure freshness. This homemade sauce is fantastic for glazing grilled pork belly or eel, or use it as a dipping sauce. It’s also a great addition to stir-fries, fried rice, or as a topping for donburi bowls!
