I mentioned before that I had leftover red beans from making shaved ice, and I should make homemade sweet red bean paste. So, I made the sweet red bean paste yesterday. The kids ran over as soon as it was ready, each taking a spoonful and exclaiming how delicious it was! Today, I’ll share how to make the red bean paste and how I used it to make sandwiches and a latte.

Sweet Red Bean Paste Ingredients

  • 400g red beans
  • 200g sugar (adjust to taste)
  • 1 tsp salt

Sweet Red Bean Sandwich Ingredients

  • 4 slices of bread
  • 100g homemade sweet red bean paste

Sweet Red Bean Latte (2 servings) Ingredients

  • 600ml milk
  • A little condensed milk (for sweetness adjustment)
  • A little whipped cream (optional)
  • 1 glutinous rice cake (cut into small pieces)

Today, we’re going to use the delicious homemade sweet red bean paste to make red bean sandwiches and refreshing red bean lattes that the kids will love. Everyone enjoys this flavor, so why not quickly whip it up with any leftover red beans from making shaved ice? I’ll share the entire process, from making the paste to how to use it.

First, wash 400g of red beans thoroughly. Carefully pick out any stones or debris mixed in. Then, soak the beans in plenty of water for at least 2-3 hours until they are well-plumped. Pour water approximately double the volume of the soaked beans and boil for about 10 minutes. Discard this first boiling water to remove any bitterness.

Rinsing the beans again after discarding the first boiling water will ensure a cleaner taste without any bitterness. Now, we’re ready to proceed with cooking the beans.

Add about 1.3 liters of water to the rinsed beans and bring to a boil over high heat. Once boiling, reduce the heat to low and simmer for about 1 hour until the beans are tender. When the water has reduced sufficiently, stir in 200g of sugar and 1 tsp of salt. Continue stirring until the sugar dissolves, and let it simmer for a short while longer. You can adjust the sugar amount based on the sweetness of the beans and your personal preference.

Voila! Your delicious homemade sweet red bean paste is ready. It’s incredibly tasty even when eaten warm! I made mine less sweet, but if you have a sweet tooth, feel free to add more sugar to your liking.

This generous batch of sweet red bean paste is perfect for making refreshing red bean shaved ice in the summer, or for use as a hearty snack in sweet red bean sandwiches or smooth red bean porridge. If you lightly blend the paste in a mixer without removing the bean skins, you’ll get a delicious red bean porridge.

Now, let’s use this delightful homemade sweet red bean paste to make sandwiches and lattes. You’ll need the homemade red bean paste, bread slices, milk, and optionally whipped cream or condensed milk for sweetness.

Trim the crusts off the bread slices. Spread about 50g of the sweet red bean paste between two slices of bread. Grill them in a waffle maker or toaster until golden brown and crispy. Cut them in half for easy serving. You’ll have crispy on the outside, gooey on the inside red bean sandwiches!

Next, let’s make the refreshing and sweet red bean latte. In a blender, combine 600ml of milk, a little condensed milk, 2 tablespoons of homemade sweet red bean paste, and some ice. Blend until smooth. Pour the blended mixture into two glasses. Then, add another tablespoon of red bean paste to each cup and top with small pieces of glutinous rice cake. For an extra treat, you can add whipped cream on top.
