Homemade Sweet Gift: How to Use Mandarins, Making Delicious Homemade Marmalade
Today, I made a refreshing and sweet mandarin marmalade! Perfect for toast, yogurt, and baking.
Ingredients- 1000g Peeled Mandarins
- 450g Granulated Sugar

Step 1
First, the foundation of delicious marmalade starts with choosing good mandarins! Prepare fresh, sweet mandarins. Wash them thoroughly and peel them completely.
Step 2
Once peeled, separate the mandarin segments. This helps them blend more smoothly later.
Step 3
Place the separated mandarin segments into a blender and blend until smooth. What texture do you prefer for your marmalade? If you like a very smooth jam, blend it very finely. If you enjoy some texture, blend it only slightly. Adjusting the consistency to your preference is key!
Step 4
Carefully pour the blended mandarins into a pot. Now, start boiling over high heat. Stir frequently to prevent the mandarins from sticking to the bottom of the pot.
Step 5
Once the mandarins begin to boil, add 450g of granulated sugar. Sugar helps thicken the jam and acts as a preservative. I divided the sugar into two additions, adding it gradually. This allows the sugar to meld better with the mandarin’s natural juices.
Step 6
As the marmalade boils, white, foamy scum will rise to the surface. Skim this foam off diligently. Removing the foam will result in a clearer, brighter colored jam with a cleaner taste, free from any unwanted flavors. You can gently scoop it off with a ladle or spoon.
Step 7
When the amount of marmalade has reduced by about half, lower the heat to medium-low. From this point on, the jam can splatter, so wear an apron and stir carefully, being mindful of burns. Slightly propping open the pot lid can also help minimize splattering.

Simmer over medium-low heat for about 20 more minutes. Be cautious not to cook it too long, as it can become too hard when cooled. It’s best to simmer gradually and check the consistency. Keep stirring continuously to prevent sticking to the bottom.
Step 9
Let’s perform a ‘set test’ to check the marmalade’s consistency. Drop a tiny bit of marmalade into a cup of cold water. If the marmalade holds its shape and doesn’t spread out, your delicious jam is ready! If it spreads, it needs to be simmered a bit longer.
Step 10
Prepare your glass jars by sterilizing them in boiling water beforehand. Carefully ladle the finished mandarin marmalade into the hot, sterilized jars, filling them generously. Be cautious as the jars and jam are very hot.
Step 11
Once filled, securely close the lids and invert the jars to cool. Inverting the jars creates a vacuum seal as the heat from the jam causes the air inside to escape. This method helps preserve the marmalade’s freshness for a longer period before opening. Store your homemade mandarin marmalade in the refrigerator and enjoy!
