Homemade Soy-Marinated Shrimp (Saewoo Jang): A True Rice Thief!

Essential Ingredients- 25 Shrimp
- 2 Cheongyang peppers (for a spicy kick)
- 2 cups Water (for sterilizing shrimp)
- 1/2 cup Soju (to remove odor and sterilize)
- 1 Tbsp Salt (for sterilizing shrimp)
Seasoning Ingredients- 1 cup Soy sauce (Korean soup soy sauce or regular)
- 1/2 cup Cooking wine (Mirin or Cheongju)
- 1/4 cup Sugar (adjust to taste)
- 3 cups Dried kelp (Kombu) broth (for a deep umami flavor)
- A pinch of whole peppercorns (for aroma)
- 1/2 Onion (for sweetness and flavor)
- 3 cloves Garlic (for fragrance)
- 1 small piece Ginger (about 1cm, to remove gamey smell)
- 2 Dried red chilies (for mild spiciness)
Optional Ingredients for Shrimp Jang Rice Bowl- 1 bowl Steamed rice
- 1 Egg yolk
- A sprinkle of shredded seaweed (Gim)
- A drizzle of sesame oil
- 1 cup Soy sauce (Korean soup soy sauce or regular)
- 1/2 cup Cooking wine (Mirin or Cheongju)
- 1/4 cup Sugar (adjust to taste)
- 3 cups Dried kelp (Kombu) broth (for a deep umami flavor)
- A pinch of whole peppercorns (for aroma)
- 1/2 Onion (for sweetness and flavor)

Cooking Instructions
Step 1
First, wash the 2 Cheongyang peppers, remove the stems, and thinly slice them. You can remove the seeds if you prefer less heat.
Step 2
While the shrimp are fresh, remove their heads and shells. You can leave the tails on or remove them based on your preference. Make a shallow cut along the back of each shrimp and carefully devein it using a toothpick or skewer for a cleaner taste and presentation.
Step 3
In a bowl, mix 2 cups of water, 1/2 cup of soju, and 1 tablespoon of salt. Soak the prepared shrimp in this saltwater solution for 5-10 minutes. This step helps remove impurities and sterilizes the shrimp.
Step 4
Drain the sterilized shrimp thoroughly in a colander. Then, arrange them neatly in an airtight container where you’ll marinate them. Avoid overcrowding the shrimp for even marination.
Step 5
Now, let’s make the flavorful marinade! In a pot, combine 1 cup of soy sauce, 1/2 cup of cooking wine, 1/4 cup of sugar, 3 cups of dried kelp broth, a pinch of whole peppercorns, 1/2 roughly chopped onion, 3 whole garlic cloves, 1 small piece of ginger, and 2 dried red chilies. Bring to a boil over high heat, then reduce to medium-low and simmer for about 5 minutes to allow the flavors to meld. Crucially, let the marinade cool completely.
Step 6
Once the marinade has cooled, strain it through a fine-mesh sieve to remove the solids, keeping only the clear liquid. Stir in the sliced Cheongyang peppers. The mild heat from the chilies will balance the richness of the shrimp.

Pour the prepared marinade over the shrimp in the airtight container, ensuring they are fully submerged. Seal the container tightly or cover with plastic wrap. Refrigerate for at least one day to marinate. For a deeper flavor, allow it to marinate for 2-3 days. Your delicious Saewoo Jang is now ready!

To make the Saewoo Jang rice bowl, place a generous portion of the marinated shrimp over a bowl of warm steamed rice. Make a small well in the center and gently place an egg yolk.
