Gnocchi Dough Ingredients
  • 500g mashed potatoes (peeled, steamed, and mashed while warm)
  • 50g grated Parmigiano Reggiano cheese (finely grated)
  • 1 pinch of salt (approx. 1/4 tsp)
  • 100g strong bread flour (plus extra for dusting)
  • A little olive oil or cooking oil (for frying)

Cooking Instructions

Step 1

Wash 500g of potatoes thoroughly with their skins on and steam for about 40 minutes until very tender. While still hot, peel the potatoes and mash them smoothly using a fork or a potato masher. Allowing the mashed potatoes to cool slightly and dry out a bit will yield better results.

Step 2

To the mashed potatoes, add 50g of finely grated Parmigiano Reggiano cheese and a pinch of salt. Mix well. Then, incorporate 100g of strong bread flour and mix with a spatula or your hands until just combined and no dry flour is visible. Avoid overmixing, as this can make the gnocchi tough.

Step 3

If the dough is too sticky, gradually add a little more flour until you achieve a smooth, pliable dough. Transfer the dough to a lightly floured work surface and gently knead for just 1-2 minutes until it comes together. Be careful not to overwork it.

Step 4

Roll the dough into long ropes, about 2cm (approx. 0.8 inches) in thickness. Use a blunt knife or bench scraper to cut these ropes into roughly 2cm pieces, shaping them into gnocchi. For extra texture and sauce adherence, you can press them lightly with a fork to create ridges.

Step 5

Heat a little olive oil or cooking oil in a non-stick skillet over medium-low heat. Carefully place the shaped gnocchi into the pan and cook, turning occasionally, until they are golden brown and slightly crispy on both sides. They should be soft inside and slightly crisp outside.
