Homemade Rich and Smooth Pave Chocolate

Whip up luxurious pave chocolate right in your kitchen with this simple recipe. It melts in your mouth, offering a rich, sweet experience that’s perfect for gifting or indulging yourself.
Ingredients- Dark chocolate 300g (recommend 50% cacao or higher)
- Fresh heavy cream 150g (use dairy cream for a richer flavor)
- Unsalted butter 10g (optional, but adds extra smoothness)
- High-quality cocoa powder, for dusting
Cooking Instructions
Step 1
First, finely chop the dark chocolate or break it into small pieces. Since tempering isn’t required, place the chocolate in a heatproof bowl and melt it gently over a double boiler. Ensure no water splashes into the chocolate.

Warm the heavy cream. You can do this in a saucepan over low heat until the edges just begin to simmer, or heat it in the microwave for about 1.5 to 2 minutes until hot. Be careful not to boil it vigorously.

Once the dark chocolate is completely melted, pour the warm heavy cream into the chocolate bowl. Gently stir with a whisk, slowly combining the chocolate and cream until they form a smooth, unified mixture.

Continue stirring until the mixture is glossy and has a silky smooth texture. Stir gently rather than vigorously to achieve the best consistency.

If you’re using butter, add it now in small pieces and stir until it’s completely melted into the chocolate mixture. Butter will add a wonderfully smooth texture and a richer flavor.

Prepare your mold. You can use a dedicated pave chocolate mold, a square mousse ring, or a simple rectangular container like a Tupperware. Line the container with parchment paper or plastic wrap.

Place the mold in the freezer for at least 2 hours, or until the chocolate is completely firm. Covering it with plastic wrap or a lid will help prevent the surface from drying out.

Once the chocolate is fully set, remove it from the freezer and carefully unmold it. If you used parchment or plastic wrap, gently lift the edges to release the chocolate block.
