Homemade Rice Burger (Ham & Cheese / Delicious Shrimp)

When you’re craving something special beyond ordinary rice, try making these rice burgers at home! I haven’t actually tried the famous store-bought rice burgers yet, but I made these imagining what they might taste like. Today, I’ll share two popular styles: the ‘Delicious Shrimp’ inspired by Bonggu’s Rice Burger and the classic ‘Ham Cheese’. Enjoy a delightful meal or snack with simple ingredients!

Basic Rice Preparation

  • 4 bowls of cooked rice
  • 1-2 Tbsp dried seaweed flakes (to taste)
  • A pinch of sesame oil
  • A pinch of salt
  • A pinch of sesame seeds
  • 1/2 tsp vinegar

Cooking Instructions

Step 1

First, let’s prepare the fillings for the ‘Ham & Cheese Rice Burger’. In a large bowl, add 4 bowls of warm cooked rice. Mix in dried seaweed flakes, a pinch of sesame oil, a pinch of salt, sesame seeds, and 1/2 tsp of vinegar. Gently combine with a spatula, being careful not to mash the rice grains. Thinly slice the onion. Cut the Spam into slices about 0.7-1 cm thick and pan-fry until golden brown. Beat the egg and cook it like scrambled eggs or a thin omelet. Finely chop the seedless kimchi and stir-fry it in a pan with sesame oil and 1 tsp of sugar until most of the moisture has evaporated. Finally, finely dice the bell pepper. Set all prepared ingredients aside.

Now, let’s shape the rice burgers. Lay out a piece of aluminum foil. Take about 1/4 of the prepared rice and flatten it into a round shape (about 8-10 cm in diameter) using your palm. Aim for a thickness of about 1 cm; not too thin, not too thick.

On top of the rice patty, generously spread the stir-fried kimchi. The spicy and sweet flavor of the kimchi will enhance the burger’s taste.

Place two slices of the golden-brown Spam on top of the kimchi.

Add the cooked egg (scrambled or omelet) over the Spam. The soft egg adds a lovely texture.

Lay a slice of cheese on top of the other ingredients. The heat from the rice and fillings will slightly melt the cheese, helping to bind everything together.

Arrange the sliced onion attractively over the cheese. Its crisp texture and sweetness are delightful.

Finally, sprinkle the finely diced bell pepper over everything for a pop of color. This completes the fillings for the ‘Ham & Cheese Rice Burger’!

Now, let’s prepare the top layer of rice for the burger. Place another 1/4 portion of rice on the foil and flatten it into a round shape, similar in size to the fillings. Gently press down the fillings before adding the top rice layer to prevent them from shifting. Ensure the fillings are snug.

Next, we’ll make the ‘Delicious Shrimp Rice Burger’. I found that when I added the diced bell pepper separately before, it tended to fall out. So this time, I’ve mixed the diced bell pepper directly into the rice, almost like a dough. First, take about 1/4 of the rice and flatten it into a round shape. (You can also use the rice mixed with bell pepper if you prefer.)

Place the whole shrimp cutlet onto the rice patty. Generously spread tartar sauce over the shrimp cutlet. For an extra kick, you can mix a tiny amount of finely chopped Korean chili pepper into the tartar sauce to cut through the richness and add flavor. (Omit the chili pepper if serving to children.)

Add a fried egg on top of the shrimp cutlet. A sunny-side-up egg with a slightly runny yolk will make it even more delicious.

Similar to the Ham & Cheese burger, arrange the sliced cooked onion nicely on top.

This is the final step for the ‘Delicious Shrimp’ version: topping it with the last portion of rice. Take about 1/4 of the rice, flatten it into a round shape, and carefully cover the fillings, ensuring they are well-enclosed. Press firmly to shape the burger and make sure the fillings are packed in nicely.

Now, it’s time to wrap both rice burgers securely in aluminum foil. Gather the four corners of the foil and wrap them tightly to secure the shape and prevent the fillings from spilling out. This also makes them easy to handle and eat.

Finally, cut the wrapped rice burgers in half to serve. Your delicious homemade rice burgers are ready! They are great served warm or at room temperature. They also make a fantastic lunchbox option for kids. Enjoy your meal!
