Rest Stop Udon Ingredients

  • 500ml Water
  • 1 portion Udon noodles (fresh or frozen)
  • 1 Tbsp Tsuyu (Japanese soy sauce base)
  • 1 Tbsp Soy sauce (regular or light)
  • 1/3 Tbsp Chicken stock powder (or MSG-based seasoning like Dashida)
  • Pinch of black pepper
  • 1 pack Seasoned seaweed (garnish, approx. 4g)
  • 1 tsp Red pepper flakes (gochugaru)
  • Sesame seeds (optional, for garnish)

Cooking Instructions

Step 1

Start by bringing 500ml of water to a rolling boil in a pot over high heat. Once the water is boiling, add 1 tablespoon of tsuyu for a rich umami base. Next, stir in 1 tablespoon of soy sauce and 1/3 tablespoon of chicken stock powder (or your preferred seasoning like Dashida). Taste the broth and if it needs more salt, add a tiny pinch to your preference. This creates the foundation of your delicious soup.

While the broth is coming together, carefully add 1 portion of udon noodles to the pot. Gently loosen the noodles with chopsticks as they begin to cook to prevent sticking.

Continue to cook the noodles for about 3 to 4 minutes, gently separating them with chopsticks. The noodles will soften and absorb the flavorful broth, creating a harmonious taste. Be careful not to overcook them; aim for tender yet slightly chewy noodles.

Once the udon noodles are cooked to your liking, turn off the heat. Now it’s time to add the finishing touches. Crumble or snip the 1 pack (approx. 4g) of seasoned seaweed over the udon. Sprinkle 1 teaspoon of red pepper flakes for a hint of spice and color. If desired, add a scattering of sesame seeds for a final flourish.
