The weather these days is scorching hot! While I generally enjoy warmer temperatures, this heatwave is something else. With the added concern of fine dust, it’s truly unbearable. My kids and I seem to be living on ice cream these days. So, I decided to make a delicious mango bingsu at home, just like the famous dessert cafes. Enjoy this sweet and icy treat!

Bingsu Ingredients

  • Milk 500ml
  • Frozen Mango Chunks 200g
  • Sweetened Condensed Milk 3 Tbsp (adjust to taste)

First, let’s prepare the base for our bingsu: frozen milk. Pour 500ml of milk into a ziplock bag or an airtight container and freeze it for at least 6 hours, or until completely solid. (Tip: Freezing the milk flat in the bag or container makes it easier to break apart and blend later.)

Once the milk is completely frozen, break it into manageable pieces and place them in a blender or food processor. Blend until it becomes a fine, fluffy snow-like texture, similar to shaved ice. Aim for a consistency that resembles a smooth slushy or shaved ice. (Note: If your blender doesn’t achieve the ultra-fine texture of a dedicated bingsu machine, don’t worry. Using an ice cream maker can result in a wonderfully smooth slushy texture.)

Spoon the blended frozen milk into a serving bowl. Generously top with the frozen mango chunks. Using pre-cut frozen mango makes this recipe incredibly convenient, saving you the hassle of peeling and chopping fresh mangoes.

Finally, drizzle sweetened condensed milk over the top to add a touch of sweetness. Adjust the amount according to your preference – more condensed milk means a richer, sweeter flavor. It’s truly delicious when generously drizzled!
