Homemade Refreshing Pickles

Make your own crunchy and delicious homemade pickles that pair perfectly with pizza, pasta, and burgers! We’ve added extra freshness and flavor by using homegrown radishes. Here’s our simple and foolproof recipe for pickles the whole family will love.
Main Ingredients- 590g Cucumbers
- 290g Carrots
- 170g Jalapeños (adjust quantity to your preference)
- 160g Radishes
Cooking Instructions
Step 1
Begin by thoroughly washing all your vegetables for the pickles: cucumbers, carrots, jalapeños, and radishes. Make sure to dry them well before proceeding.
Step 2
Sterilizing the glass jars is a crucial step for pickle preservation. Place the jars in a pot of cold water and bring it to a boil. Starting with cold water prevents the glass from cracking. Once boiled, carefully remove the jars and let them dry completely upside down. Ensure no moisture remains, as water can cause the pickles to spoil.
Step 3
Now, prepare the vegetables by cutting them into bite-sized pieces. Slice the cucumbers about 0.5cm thick, either on an angle or into rounds. Cut the carrots and radishes into similar-sized pieces. For the jalapeños, removing the seeds and slicing them thinly will help control the spiciness.
Step 4
Pack the cut vegetables evenly into the 3 sterilized glass jars. Aim to fill them about two-thirds full.
Step 5
It’s time to make the delicious pickling brine! In a saucepan, combine 800g of water, 400g of sugar, 380g of vinegar, and 5g of pickling spices. Bring this mixture to a boil. I personally prefer a milder tang, so I reduced the vinegar slightly. If you like your pickles extra sour, feel free to increase the vinegar. You can also add a pinch of salt for extra depth of flavor. Adjust the ingredient ratios to suit your personal taste!
Step 6
Once the brine is boiling vigorously, turn off the heat. Immediately pour the hot brine over the vegetables in the jars, ensuring they are fully submerged. After pouring the hot brine, leave the jar lids open to allow some steam to escape and cool down. Once it has cooled slightly, close the lids tightly. I let mine sit at room temperature for one day to begin the pickling process before refrigerating them. Refrigeration will help keep them fresh for longer.
