Homemade Kalguksu: A Simple and Delicious Noodle Soup

Ingredients- Fresh Kalguksu noodles (store-bought) 200g
- 1/2 Zucchini (or Korean squash)
- 3 Potatoes
- 50g Oyster mushrooms (or similar)
- 600ml Broth (anchovy broth, kelp broth, chicken stock, or water)
Cooking Instructions
Step 1
Begin by preparing all the fresh ingredients for your Kalguksu. Wash and get your fresh Kalguksu noodles, zucchini, potatoes, and oyster mushrooms ready.
Step 2
Slice the zucchini into half-moon shapes. Try not to slice them too thinly, so they retain a pleasant chewiness when cooked.
Step 3
Peel the potatoes and rinse them thoroughly under running water. Then, cut them in half and slice into half-moon shapes, similar to the zucchini. Cutting them to a moderate size will help them cook evenly.
Step 4
Gently rinse the oyster mushrooms to remove any dirt. Tear them apart into bite-sized pieces by hand. This will help them release their flavor into the broth.
Step 5
Pour 600ml of your chosen broth into a pot. Add the sliced zucchini, potatoes, and torn oyster mushrooms. For a richer flavor, using homemade anchovy broth, kelp broth, or chicken stock is recommended. If you don’t have any of these, plain water will also work.
Step 6
Once the broth with the vegetables comes to a rolling boil over high heat, add the fresh Kalguksu noodles. Gently loosen the noodles to prevent them from sticking together, and continue to boil until the noodles are cooked through, typically about 3-5 minutes.
Step 7
Your delicious Kalguksu is ready when the noodles turn translucent and are fully cooked. Check a strand to ensure it’s tender but still has a slight bite.
Step 8
Serve the Kalguksu immediately in bowls, presenting it attractively. Enjoy this comforting noodle soup while it’s hot!
