Begin by preparing your glass jar. To ensure it’s hygienically clean and safe for storing your syrup, perform a hot water sterilization. Place the empty jar in a pot, cover with cold water, and bring to a boil. Let it simmer for about 5 minutes. Starting with cold water helps prevent the glass from cracking due to sudden temperature changes.

Step 2

After sterilizing, carefully remove the jar and invert it on a clean surface to allow all the water to drain and dry completely. Don’t forget the lid; briefly dip it in the boiling water as well, then let it air dry.

Step 3

Next, prepare the ginger. Thoroughly peel the skin off the fresh ginger using a knife or a spoon. Once peeled, finely grate or blend the ginger until it has a smooth, paste-like consistency. This will ensure the ginger’s potent flavor and aroma infuse well into the syrup.

Step 4

In a clean bowl, combine the grated ginger with the honey. The recipe calls for a 1:2 ratio of ginger to honey (500g ginger to 1kg honey), but feel free to adjust the amount of honey to your preference for sweetness. The honey will mellow the ginger’s natural spiciness.

Step 5

Using a spatula or spoon, gently stir the mixture until the honey and ginger are thoroughly combined. Ensure there are no clumps and that the honey evenly coats the grated ginger, allowing the flavors to meld beautifully.

Step 6

Transfer the well-mixed honey ginger syrup into your sterilized jar, leaving a little space at the top. Let the jar sit at room temperature, away from direct sunlight, for about 2-3 days. This allows the honey and ginger to begin their flavor fusion. After this initial period, refrigerate the syrup for at least 10 days to allow it to mature and develop a richer taste before consumption.

Step 7

After 10 days of maturation in the refrigerator, you’ll notice the ginger solids may have settled at the bottom. Give the syrup a good stir before serving; it should have thickened nicely. To enjoy, mix 1-2 tablespoons of the syrup into a cup of hot water to create a soothing honey ginger tea. Adjust the amount to your liking for a perfectly balanced, warming beverage.
