This method allows you to create thick and delicious homemade Greek yogurt without special equipment. Let’s begin making your yogurt! The ‘Keep Warm’ function on your rice cooker maintains a stable temperature ideal for probiotic activity. First, pour 1L of fresh milk into the inner pot of the rice cooker.

Next, add the prepared plain yogurt (or drinkable yogurt) into the milk in the inner pot.

Gently stir the milk and yogurt together using a wooden spoon or silicone spatula until well combined. Avoid metal utensils, as they can sometimes interfere with probiotic activity.

Once everything is mixed, close the rice cooker lid and select the ‘Keep Warm’ setting. Set the timer for exactly 1 hour.

Here’s a crucial tip: If you keep the ‘Keep Warm’ setting on for longer than 1 hour, your yogurt might become too watery and may not set properly. Ensuring the ‘Keep Warm’ function runs for precisely 1 hour is key for optimal fermentation.

After the 1-hour ‘Keep Warm’ cycle is complete, turn off the rice cooker and leave the lid closed. Let it sit undisturbed at room temperature for 7-8 hours to allow the yogurt to ferment slowly. When you open the lid, you’ll notice the formerly liquid milk has transformed into a thick, creamy yogurt.

Now, let’s strain the yogurt to achieve that characteristic thick Greek yogurt texture. Line a sieve with cheesecloth or a fine-mesh strainer, and place it over a bowl. Pour the fermented yogurt into the lined sieve. Loosely gather the cheesecloth and let the whey drain out in the refrigerator for about 3-4 hours. The drained whey is nutrient-rich and can be used in baking or cooking!
