Ingredients (Ratio)
- Grapes: 3 parts
- Sugar: 1 part
- Oligosaccharide: To taste (for added sweetness)
- Lemon Juice: A little (for flavor and preservation)
- Flour for washing: As needed (for cleaning grapes)
Cooking Instructions
Step 1
Gently separate the grapes from their stems. Place the grapes in a bowl and add enough flour to coat them. Gently rub the grapes with the flour under running water. The flour acts as a gentle abrasive to remove any dust or impurities, ensuring a thorough clean. Rinse them thoroughly and drain well in a colander.
Step 2
Place the washed and drained grapes into a pot. Begin to heat them. While some recipes add sugar at this stage to directly make syrup, we’re omitting it here to first extract the pure 100% grape juice. The grapes will naturally release their own juice as they cook.
Step 3
Once the grapes have cooked down, strain them through a fine-mesh sieve or cheesecloth. Allow the pure grape juice to drip through without pressing. This will yield a clear, 100% pure grape juice, free from pulp.
Step 4
The clear liquid you’ve collected is 100% pure grape juice! Chilled, this juice is delicious on its own – a healthy drink with no added sugar or preservatives, showcasing the natural flavor of the grapes.
Step 5
Take the remaining grape pulp left in the sieve and place it back into the pot. Mash the pulp thoroughly to extract as much remaining juice as possible. Pressing the fruit will help release its rich flavor and color.
Step 6
Combine the concentrated grape juice extracted in step 4 with the 100% pure grape juice collected in step 2. Return this mixture to the pot and place it over low heat to begin simmering and thickening into a syrup.
Step 7
Now, add the sugar and let it simmer gently until it thickens into a syrup. We used a ratio of approximately 3 parts grape juice to 1 part sugar. If you prefer a sweeter syrup or plan to store it for a longer period, consider increasing the sugar to a 1:1 ratio with the grape juice. Stir occasionally as it simmers on low heat.
Step 8
Once the syrup reaches your desired consistency, add a splash of lemon juice. This brightens the flavor and helps with preservation. Let it simmer for another moment after adding the lemon juice to fully incorporate its essence.
Step 9
If you desire an even sweeter syrup, you can add oligosaccharide (rice syrup) to taste, either along with the sugar or as a substitute. This will add a lovely sheen and a smooth sweetness to your syrup.
Step 10
