Step 1
Ghee is a clarified butter that has had its lactose and casein removed, making it suitable even for those with milk allergies. Its higher smoke point also makes it an excellent cooking oil for frying and sautéing.
Step 2
Place the unsalted butter in a clean pan and begin to melt it over medium-low heat. Be mindful of the heat to prevent the butter from burning.
Step 3
As the butter melts, a white foam will start to appear on the surface. Gently stir it once or twice with chopsticks or a spatula. Avoid stirring too frequently.
Step 4
Continue to simmer gently over low heat until the opaque butter gradually turns clear and a transparent golden color. During this process, the water and impurities in the butter will evaporate and separate. This typically takes about 10-15 minutes.
Step 5
Once no more foam appears and the butter becomes clear and transparent, turn off the heat. Carefully strain the hot ghee through a clean coffee filter or several layers of paper towels into a container. Allow it to cool and solidify in the refrigerator before use. Homemade ghee has a relatively long shelf life, even at room temperature.
