Ingredients
  • 900g Milk Couverture Chocolate
  • 120g Roasted Almonds
  • 6 Chocolate Wafer Crisps

Cooking Instructions

Step 1

To create the double boiler, fill a pot with water about one-third full and heat it to 60°C (140°F). Place 600g of couverture chocolate in a heatproof bowl set over the pot, ensuring the bottom of the bowl doesn’t touch the water. Stir gently until the chocolate is completely melted and smooth. Pour the melted chocolate into a piping bag. Carefully pipe about 80% of the chocolate into your silicone molds. Cut the chocolate wafer crisps into pieces and gently press them into the chocolate in the molds. This step is key to achieving the signature crunchy texture of Ferrero Rocher.

Step 2

Place the filled molds in the refrigerator for about 20 to 30 minutes, or until the chocolate is firm to the touch. This allows the chocolate to set properly before the next stage.

Step 3

Once the chocolate halves are firm, carefully unmold them. Using the remaining melted chocolate in the piping bag, pipe a small amount onto the edge of one chocolate half. Gently place another chocolate half on top to create a sphere, pressing lightly to secure them together. Be careful to keep the edges neat and prevent excess chocolate from oozing out.

Step 4

While the chocolate spheres are setting, melt the remaining 300g of couverture chocolate using the same double boiler method. Roughly chop the 120g of roasted almonds with a knife and stir them into the melted chocolate. This mixture will form the hazelnut-filled center and outer coating, providing that classic rich, nutty flavor and satisfying crunch.

Step 5

Using a large spoon, generously drizzle the almond-chocolate mixture over the chocolate spheres. Allow the chocolate to drip naturally for an appealing look. For a cleaner finish, use two spoons to tidy up any excess chocolate that drips onto your work surface. Carefully transfer the chocolates to a sheet of parchment paper or a Teflon sheet to set completely.

Step 6

Once fully hardened, place each homemade Ferrero Rocher into a paper candy cup. Arrange them in a decorative chocolate box and cover with a clear OPP bag for a beautiful presentation. Your delightful homemade Ferrero Rocher chocolates are now ready to be gifted!
