Homemade Eggplant Pizza

This is a special homemade pizza made with the last harvest of fresh eggplants from my husband’s garden! While eggplant stir-fried with oyster sauce is delicious, this eggplant pizza is perfect as a main dinner dish during a diet plateau. It’s guilt-free and helped me lose about 1kg! (That’s my little secret!) 😉

Main Ingredients

  • 1 eggplant
  • 1/4 onion
  • 1/4 zucchini
  • 1/3 red bell pepper
  • 4 Tbsp chicken breast (finely chopped or minced)
  • 4 Tbsp canned corn
  • 3 olives (canned or jarred)
  • Mozzarella cheese, as desired

Seasoning & Sauce

  • 2 pinches of salt
  • Tomato sauce, as desired

Cooking Instructions

Step 1

Wash the eggplant thoroughly and slice it into thick rounds, about 5cm thick. Lay the sliced eggplant flat and sprinkle 2 pinches of salt evenly over it. Let it sit for about 10 minutes to draw out the moisture. This step helps to remove any bitterness from the eggplant and gives it a chewier texture.

While the eggplant is salting, prepare the toppings that will add flavor to your pizza. Finely dice the onion, zucchini, and red bell pepper into pieces similar in size to corn kernels. Prepare the chicken breast by chopping it into the same size. Slice the jarred olives thinly, keeping their round shape.

After salting, use paper towels to gently pat the eggplant slices dry, removing excess moisture. Spread tomato sauce evenly over the flat side of each eggplant slice using a spoon. Applying a thin layer of sauce allows the original flavors of the ingredients to shine through.

Generously pile the diced vegetables, chicken breast, and canned corn onto the eggplant slices, covering the sauce layer like a pizza topping. Sprinkle mozzarella cheese to your liking, then artfully arrange the sliced olives on top to finish.

Preheat your oven to 180°C (350°F) and bake the eggplant pizzas for about 10 minutes. If using an air fryer, set it to a similar temperature and adjust the cooking time accordingly (baking time may vary depending on your appliance, so check halfway through). If you don’t have an oven or air fryer, you can achieve a delicious result by lightly oiling a pan, placing the pizzas on low heat, covering with a lid, and cooking until the mozzarella cheese is melted and golden.
