Finally, pour in 1 tablespoon of hot water. The hot water helps to dissolve the coffee and sugar more effectively, aiding in the whipping process. (Tip: Water around 140-158°F or 60-70°C is ideal – not boiling, but hot enough.)

Now for the most satisfying part: whipping! Using a mini electric whisk (hand mixer) is highly recommended for ease and speed. Whisk the mixture for about 5 to 10 minutes, or until it becomes thick, creamy, and holds stiff peaks. This means when you lift the whisk, the coffee mixture should stand up without falling. If you’re using a manual whisk, it will require more effort and time, but the result is just as rewarding!

You’ll know the Dalgona base is ready when it’s thick enough to hold its shape. If you lift the whisk, the mixture should form a peak that doesn’t collapse. It will have a beautiful, glossy golden-brown color.
