Main Ingredients

  • 3 sheets of roasted seaweed (gim)
  • 10g pine needles (optional, for enhanced aroma)

Seasoning

  • 1 tsp coarse sea salt
  • 3 Tbsp perilla oil (deulgireum)

Cooking Instructions

Step 1

It’s crucial to store your seaweed in a dry place where it won’t absorb moisture. Using fresh, crisp seaweed will result in the best crispy and flavorful Gim-gui.

Step 2

Heat a small pan over low heat. Add the 1 tsp of coarse sea salt and toast it until it becomes fragrant and slightly golden. Be careful not to burn the salt; toasting it slowly helps to deepen its flavor.

Step 3

While the salt is still warm, crush it finely using the blade of a knife, or process it into a powder using a blender or mortar and pestle. This ensures the seasoning adheres evenly to the seaweed.

Step 4

Pour the 3 Tbsp of perilla oil into a wide dish. Prepare your pine needles, which will act as a natural brush. Dip the pine needles into the perilla oil and gently brush a thin, even layer onto both sides of each seaweed sheet. Using pine needles imparts a subtle, pleasant pine aroma, making your Gim-gui even more special.

Step 5

Using a wire rack or grill is ideal for roasting the seaweed. Lay the perilla oil-brushed seaweed sheets flat on the rack. Place the rack over medium-low heat, turning the seaweed frequently to ensure it roasts evenly until golden brown and crispy, without burning. If using a pan, cook over very low heat, watching carefully to prevent scorching.

Step 6

Once the Gim-gui is perfectly roasted, let it cool slightly. Then, cut each sheet into 8 equal pieces or your desired serving size. Neatly fold them, similar to how market-style Gim is presented, and secure with toothpicks. This makes them easy to handle, serve, and store.
