Ingredients

  • 1 carton (approx. 500ml) milk, frozen solid
  • 1 Tbsp chewy rice cakes (tteok), sliced small (optional, e.g., mini mochi or sliced rice cake)
  • 3 Tbsp sweetened red bean paste (anko) or pre-cooked bingsu red beans
  • 1 Tbsp honey or syrup (adjust to taste)
  • 1 Tbsp roasted soybean powder (kinako)

To enjoy the perfect summer dessert, Bingsu, at home, freeze a carton of milk completely. It’s best to freeze it for at least 4 hours, or until solid.

Remove the frozen milk carton from the freezer. You can either cut the frozen milk into manageable chunks (about 1-2 cm) or remove the carton entirely. Place the frozen milk into a blender or food processor and blend until finely shaved or powdery. If the blender struggles, stop and stir occasionally to help break up the ice. (If you don’t have a powerful blender, you can try massaging the milk carton before freezing to soften it slightly, or pour the milk into ice cube trays and blend the cubes.)

Spoon the finely shaved milk ice into a serving bowl, creating a nice mound. Generously top with your prepared chewy rice cakes, the sweet red bean paste, and a sprinkle of roasted soybean powder. Feel free to drizzle with honey or syrup to your liking. You can also add fresh fruits or condensed milk for an even more indulgent treat.
