Easily make ‘Mom’s Homemade Fish Cakes’ at home using frozen cod fillets, readily available at the supermarket. This recipe transforms cod, often used for cod pancakes, into a delightful snack by grinding it with vegetables and glutinous rice flour, then pan-frying it until golden brown. The result is a crispy exterior with a tender, flavorful interior, offering a unique charm different from regular cod pancakes. It’s a wonderful dish the whole family can enjoy.

Main Ingredients

  • 400g frozen cod fillet
  • 1/2 onion
  • 2 Korean green chilies (cheongyang peppers)
  • 1/8 carrot
  • 3 Tbsp rice wine (cheongju)
  • 1 tsp black pepper
  • 1 tsp herb salt
  • 6 Tbsp glutinous rice flour

Prepare the frozen cod fillet (400g) by thawing it only slightly, not completely. Roughly chop the semi-thawed cod into manageable pieces and place them in a blender. Grind until it has a crumbly texture, similar to shaved ice.

Transfer the ground cod to a wide bowl. Grinding it beforehand makes it much easier to mix with the other ingredients.

Finely mince 1/2 onion, 2 Korean green chilies, and 1/8 carrot. Add them to the bowl with the ground cod. Finely mincing the vegetables ensures they blend well into the batter and improve the texture. Mix in 3 Tbsp of rice wine (cheongju), 1 tsp of black pepper, and 1 tsp of herb salt. Stir everything thoroughly until well combined.

Add 6 Tbsp of glutinous rice flour to bind the mixture and create a chewy texture. Knead the mixture vigorously with your hands, much like making dough for ‘sujebi’ (Korean hand-pulled dough soup). Continue kneading until all ingredients are well incorporated and the mixture is sticky and cohesive. This step is crucial for achieving the desired chewy texture.

Scoop out about 1.5 tablespoon portions of the dough. Roll each portion into a ball and then flatten it between your palms to form small, round patties. These flattened shapes are ideal for pan-frying.

Heat a generous amount of cooking oil in a pan over medium-low heat. Place the shaped patties into the hot oil. Fry them on both sides until they are golden brown and slightly crispy, resembling deep-fried items. You’ll achieve a delicious homemade fish cake that’s crispy on the outside and tender inside.
