A Simple Recipe for Creamy Vanilla Ice Cream Using Heavy Cream, Milk, and Eggs

Ingredients- 275-300ml Whole Milk
- 375ml Heavy Cream
- 3 Large Eggs (yolks only)
- 10 Tbsp Granulated Sugar
- 1-2 tsp Vanilla Extract or Vanilla Oil

Step 1
In a mixing bowl, separate the yolks from 3 large eggs. Place the egg yolks into the bowl. The egg whites can be saved for another recipe!

Don’t discard the egg whites! You can lightly grease a pan, cook the egg whites into a thin omelet, and use them as a topping for fried rice or salads. It’s a resourceful kitchen tip!
Step 3
To the bowl with the egg yolks, add 1-2 teaspoons of vanilla extract or oil and 10 tablespoons of granulated sugar. Whisk or stir gently until the sugar is dissolved and a slightly frothy mixture forms.

Measure out 275-300ml of whole milk. Pour it into a microwave-safe container and heat until warm to the touch, about 1 minute. Be careful not to overheat.

Pour about half of the warm milk (around 135-150ml) slowly into the bowl with the egg yolk mixture. Stir gently to combine. Adding the milk gradually prevents the eggs from scrambling.

Once the egg yolks and milk are well combined, add the remaining warm milk to the bowl. Stir everything together until thoroughly mixed. This creates your ice cream base.

In a separate, chilled bowl, pour 375ml of cold heavy cream. Whip the cream using an electric mixer or a whisk until stiff peaks form. Gently fold the whipped cream into the milk mixture in the first bowl. Be careful not to deflate the whipped cream, as this will ensure a smooth texture.
Step 8
Pour the ice cream mixture into a freezer-safe container. For the first 1-2 hours, remove the container from the freezer every 1-2 hours and stir vigorously with a fork. This helps break up ice crystals and creates a creamier texture. Repeat this stirring process about two times. Then, freeze until completely solid. This will result in delicious homemade vanilla ice cream.
