Chocolate Boba Tea

  • 80ml warm milk
  • 2/3 Tbsp cocoa powder
  • 2/3 Tbsp sugar
  • 1/2 cup dark chocolate (approx. 50-60g), chopped
  • 280ml cold milk
  • 3/4 cup tapioca pearls (approx. 60-70g)
  • A little honey or syrup (to taste)
  • Ice cubes, as needed

Add the tapioca pearls to boiling water. Stir gently to prevent them from sticking to the bottom. Once the pearls float to the surface, reduce the heat to medium and continue to boil for about 7 more minutes, until they become translucent. This indicates they are cooked.

Turn off the heat, cover the pot with a lid, and let the pearls steam for about 10 minutes. This resting period helps them achieve a wonderfully chewy and soft texture.

Rinse the cooked tapioca pearls under cold running water to cool them down. Drain any excess water and then toss them with honey or syrup. This prevents them from clumping together and adds a lovely sweetness. Adjust the sweetness to your preference.
